Being on maternity leave leaves me a busy gal, taking care of a newborn, toddler, hubby and a home have fined tuned my multi tasking skills, to say the least.
However, since I took an extended maternity leave (4 months) it has left me with a bit of a void, I am so used to going to many meetings, closing deals, solving mini crises, and adult socialization that I have found a couple of new ways to keep my brain occupied…(at least until I get back to work in April )
I have been blogging more, organizing more, decorating more and lately I’ve been BAKING!
It all started about 4 weeks ago when I saw a recipe for the perfect wedding cupcake. This intrigued me as I have always made cupcakes from the simple on the box recipes, but when I read this recipe I saw ingredients that I had never seen in a cupcake like sour cream! Since my son’s 3rd birthday is coming up in a few weeks, I decided to try this recipe out.
Of course, this led to an in depth google search of cupcake blogs, flavors & techniques, and I was really shocked at the VARIETY and CREATIVITY that was out there! As a big fan of cupcake wars on the food network, I had no idea I could have so much fun in my own kitchen!
Again, fast forward to valentine’s day…I knew hubby and I wouldn’t be able to leave the house, we didn’t have a babysitter for the kids and it was a weeknight…so I decided to bring valentine’s day to the house. I ordered dinner from our favorite restaurant and made him surprise cupcakes. Again, I scoured my google reader and pinterest for awesome cupcake recipes and I found a recipe for a vanilla cupcake with strawberry filling with a cream cheese frosting.
I’ll admit, I was
very a bit intimidated. I went to Tarjay, bought all of the ingredients including a cupcake filler/decorator and went to work.

I know I have a ways to go with the decorating skills, but according to hubby (and his friends at work) he loved them!
Sidebar: Good thing I am not a sweets kinda gal, or else I’d be in trouble. My weakness unfortunately is salt—a bag of chips is my worst enemy!
I figure if I get any good at this maybe this can be my 2012 side hustle? Lots of practice and trials to go through before I get there. Truth be told there isn’t a place around here that sells decent cupcakes…
I will be sharing and taking pics of the stuff I do, if you bake, I am totally open to suggestions to improving my baking resume…For now I’m sticking with small treats, cupcakes, tarts etc.
Since we can’t possibly eat all of these treats, I will be sending the majority of them to hubby’s job and bringing them to work when I go back, (and they won’t hold back on commentary!! LOL) I am also sharing with sis in law who is a sweets fanatic and whomever randomly drops by my house.
Vanilla Cupcake with Strawberry Filling Post Mortem:
- When I cooked the strawberries down for the filling I would have cooked it longer than 5 minutes, the filling has to be very smooth with no chunks. When I went to fill, it was difficult because the strawberry chunks kept getting stuck in the tip of the decorator.
- It was interesting to know that the fruit filling could have been peach, strawberry, pineapple or raspberry.
