- ½ cup unsalted butter, room temp
- ½ cup light brown sugar, packed
- ½ cup granulated sugar
- 1 large egg, brought to room temperature
- ½ cup peanut butter, smooth
- 1 tsp vanilla extract
- 1 1/3 cup all purpose flour, scooped and leveled
- 2 tsp cornstarch
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt

- 4 tbsp unsalted butter, room temperature
- 1/3 cup smooth peanut butter
- 1 cup powdered sugar
- 2-3 tsp milk
- 1 tsp vanilla extract
- ½ cup seedless raspberry jelly

Ingredients
- ½ cup unsalted butter, room temp
- ½ cup light brown sugar, packed
- ½ cup granulated sugar
- 1 large egg, brought to room temperature
- ½ cup peanut butter, smooth
- 1 tsp vanilla extract
- 1 1/3 cup all purpose flour, scooped and leveled
- 2 tsp cornstarch
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- Peanut butter butter cream
- 4 tbsp unsalted butter, room temperature
- 1/3 cup smooth peanut butter
- 1 cup powdered sugar
- 2-3 tsp milk
- 1 tsp vanilla extract
- ½ cup seedless raspberry jelly
Instructions
- Preheat the oven to 350F
- Place the egg In a bowl of warm water for 5 mins to bring to room temperature
- Line baking sheets with parchment paper and set aside
- Cream together butter, brown sugar and granulated sugar until light and fluffy.
- Add in the egg, vanilla and peanutbutter and mix until smooth.
- Add in the flour, baking soda, baking powder, salt and cornstarch.
- Mix until just combined.
- Scoop and form, 12 evenly shaped balls of dough
- Press them down to about ½ inch thickness
- Bake for 14-15 mins until edges are golden (cookies will crinkle on the top)
- Allow to cool on baking sheet for at least ten mins before moving to cooling rack.
- Let cookies cool completely-and make buttercream.
- For the buttercream
- Mix the butter and peanutbutter together until smooth
- Add in the powdered sugar, vanilla and 2 tbsp milk
- Mix until incorporated.
- Only add in the last tbsp of milk if it needs it.
- Mix on high for 2-3 mins to make the frosting light and fluffy
- Add to a piping bag (if using a tip use tip 14)
- Add jelly to a piping bag (if using a tip use tip 14).
- Pipe an open swirl of the peanutbutter buttercream.
- Filling in the inside swirl with jelly.
- Serve and enjoy
Notes
Avoid using a jam or jelly with preserves in it, it will be difficult to pipe within the swirl.
Also use seedless jams or jelly
