  • ½ cup (1 stick) unsalted butter, room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 egg, brought to room temperature
  • 1 tsp vanilla extract
  • 1 ½ cup all purpose flour, scooped and leveled
  • ¼ tsp cornstarch
  • ½ tsp baking powder
  • ½ baking soda
  • ¼ tsp kosher salt
  • 3-4 crushed graham crackers
  • Ingredients for Filling
  • 4 oz cream
  • 4 oz sweetened condensed milk
  • ¼ cup lime juice
  • 3-4 tbsp powdered sugar
  • 2 tsp lime zest, optional

    1. For the cookie
    2. Preheat the oven to 350
    3. Line a baking sheet with parchment paper and set aside
    4. Cream together butter and both sugars until light and fluffy.
    5. Add in the egg and vanilla and mix completely.
    6. Next sift in all purpose flour, salt, baking soda, baking powder and cornstarch.
    7. Mix until it just comes together.
    8. Using a large (3 tbsp) cookie scooper, form a ball of dough.
    9. Roll dough in the crushed graham cracker
    10. Place on baking sheet, press down the center with a tbsp measuring spoon
    11. Bake for 10 mins
    12. Remove from oven, press down on the center with a ¼ cup measuring cup
    13. Return to the oven for 3 min
    14. Remove and let cool fully.
    15. Make the filling
    16. While the cookies are baking make the filling.
    17. Beat the cream cheese until smooth – do not skip this or it will be lumpy
    18. Once smooth, gradually add sweetened condensed milk
    19. Add 3 tbsp powdered sugar (if it’s too runny add one more)
    20. Add 1 tsp lime juice.
    21. Filling should NOT be runny.
    22. Scoop into the well of the cookies.
    23. Refrigerate until set (45min-60min)
    24. Top with whipped cream and a lime slice.
    25. Enjoy
