How to Make It

- ¼ tsp cornstarch
- ½ tsp baking powder
- ½ baking soda
- ¼ tsp kosher salt
- 3-4 crushed graham crackers

- 4 oz sweetened condensed milk
- ¼ cup lime juice
- 3-4 tbsp powdered sugar

Instructions
- For the cookie
- Preheat the oven to 350
- Line a baking sheet with parchment paper and set aside
- Cream together butter and both sugars until light and fluffy.
- Add in the egg and vanilla and mix completely.
- Next sift in all purpose flour, salt, baking soda, baking powder and cornstarch.
- Mix until it just comes together.
- Using a large (3 tbsp) cookie scooper, form a ball of dough.
- Roll dough in the crushed graham cracker
- Place on baking sheet, press down the center with a tbsp measuring spoon
- Bake for 10 mins
- Remove from oven, press down on the center with a ¼ cup measuring cup
- Return to the oven for 3 min
- Remove and let cool fully.
- Make the filling
- While the cookies are baking make the filling.
- Beat the cream cheese until smooth – do not skip this or it will be lumpy
- Once smooth, gradually add sweetened condensed milk
- Add 3 tbsp powdered sugar (if it’s too runny add one more)
- Add 1 tsp lime juice.
- Filling should NOT be runny.
- Scoop into the well of the cookies.
- Refrigerate until set (45min-60min)
- Top with whipped cream and a lime slice.
- Enjoy
