Ingredients

  • Streusel -
  • ½ cup flour
  • ½ cup brown sugar
  • 2 teaspoons cinnamon
  • 5 tablespoons butter, soft
  • Cookie -
  • 2 cups flour
  • 1 stick unsalted butter, soft
  • 1 teaspoon cornstarch
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup sugar
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • 1 egg + 1 egg yolk
  • ½ teaspoon salt
  • Icing -
  • 2 tablespoons no salt butter, melted
  • 3 tablespoons heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 400 degrees and line baking sheets with parchment paper 
  2. Streusel - In a small bowl mix all streusel ingredients together to make a crumble - chill until ready to use 
  3. Cookies - in a large bowl whisk together flour, cornstarch, baking soda, baking powder, and salt - set aside 
  4. In a mixing bowl beat the butter and sugars until creamy 
  5. Add in the vanilla and eggs 
  6. Gradually add in the dry ingredients until fully combined 
  7. Chill the dough for about 15 minutes 
  8. Scoop out onto lined cookie sheet 
  9. Use your thumb to press an indent in the center of each cookie 
  10. Use a fork to crumble the streusel and spoon a small amount into the indent of each cookie 
  11. Bake for 9-11 minutes 
  12. Cool for 10 minutes on pan before moving to a wire rack 
  13. Icing - whisk all icing ingredients together until smooth then drizzle or pipe over the top of the cookies 
  14. Serve & enjoy!
