Ingredients

  • 1 stick unsalted butter, room temperature
  • ¼ c biscoff cookie butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg, brought to room temp*
  • 1 tsp vanilla extract
  • 1 ¼ cup all purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp kosher salt
  • ¾ cup semi-sweet chocolate chips
  • 4-5 biscoff cookies, crushed

Instructions

  1. Place the egg in a bowl of warm water (to bring to room temp)
  2. Mix butter and cookie butter until smooth
  3. Add brown sugar and granulated sugar, mix until light and fluffy
  4. Add in the egg and vanilla and mix
  5. Mix (of sift) together flour, baking soda, baking powder and salt then gradually add to the wet mixture until fully incorporated (do not over mix)
  6. Add in the chocolate chips and biscoff cookies, fold in with a rubber spatula or wooden spoon
  7. Scoop even size mounds of dough onto a parchment lined baking sheet
  8. Place in the fridge to chill for 30 mins.
  9. Begin preheating the oven to 350 degrees
  10. After the dough chills for 30 mins, bake for 12-15 min
  11. Remove from the oven and let sit on tray for at least 10 mins to cool
  12. Move to a baking wrack or serve and enjoy.
