Easy Salted Caramel Brownie Cookies Recipe

Salted Caramel Brownie Cookies

If you’re a fan of chewy caramels, decadent chocolate, and a hint of saltiness in your cookies, prepare to fall in love with our Salted Caramel Brownie Cookies.

These goodies are reminiscent of caramel brownies, only in delightful cookie form. Imagine biting into a chewy brownie cookie with a gooey caramel center, topped with a sprinkle of flaky sea salt.

It’s a perfect way to satiate any chocolate craving, and it quickly became one of our favorite cookies since we first baked them last year.

What ingredients do you need for these fudgy brownie cookies?

  • 2 cups semisweet chocolate chips
  • ¼ cup butter, unsalted
  • 2 ½ cups all purpose flour
  • ¼ cup + 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup white sugar
  • ¾ cup dark brown sugar
  • 4 eggs
  • ¼ cup milk
  • 2 teaspoons vanilla extract
  • Coarse Sea Salt
  • Caramels

How do you make these chewy brownie cookies?

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a saucepan add the butter. Once melted, add the chocolate chips. Stir continuously until the chocolate is completely melted and smooth. Take off the heat and set aside.
  3. In a separate bowl add the flour, cocoa powder, baking powder and salt. Whisk together until combined.
  4. Navigate back to the melted chocolate. Add the eggs, sugars, milk and vanilla extract to the chocolate. Whisk together until thoroughly combined.
  5. Pour the wet chocolate mixture into the dry ingredients. Use a spoon or rubber spatula to fold everything together until a brownie cookie batter is formed. Folding at this steps ensures the batter is not overmixed.
  6. Use a 1 inch scooper to scoop a ball of the brownie cookie batter and place on the parchment paper. Press a caramel into the center of the cookie dough. Take another half a teaspoon of the cookie dough to cover and seal the caramel inside the cookie.
  7. Repeat this with the rest of the cookie dough and caramels.
  8. Sprinkle the top of each cookie with a generous amount of coarse sea salt.
  9. Bake in the oven for 15 minutes or until a crinkly like brownie crust has formed on the cookies.
  10. Let cool for 5 minutes, serve and enjoy!

FAQs

Q: Can I use a box brownie mix for the chocolate mixture?
A: For this original recipe, we make our own chocolate brownie cookies using cocoa powder and melted chocolate. However, if you’re short on time, a box brownie mix can be used.

Q: Can I substitute the dark chocolate with milk chocolate?
A: Absolutely! Just note that milk chocolate will make your cookies a bit sweeter.

Tips and Tricks

  1. Have all your wet ingredients at room temperature for a smoother, well-incorporated cookie dough.
  2. Use a cookie scoop or ice cream scoop to ensure even tablespoons of dough for big cookies.
  3. Make sure to melt the chocolate over low heat to prevent it from burning.

Variations

  1. Chocolate Peanut Butter Caramel Cookies: Swap the caramel creme filling with peanut butter for a delicious twist.
  2. Triple Chocolate Brownie Cookies: Use a blend of dark, milk, and white chocolate chips in the cookie batter for a treat that’s perfect for chocolate lovers.

Where to Serve

These cookies are a fantastic addition to a holiday cookie box, for potlucks, or simply for a sweet treat after dinner.

Storage

Store any leftover cookies in an airtight container at room temperature. They’ll keep for up to a week.

Common Problems and How to Avoid Them

Problem: My cookies aren’t soft and chewy.
A: Make sure to not overbake the cookies. They might seem underdone when you take them out, but they will firm up as they cool on the wire rack.

Problem: My caramel filling isn’t gooey.
A: This could be because your caramels weren’t melted properly or fully. You can also pre melt the caramels.

Making this Recipe with Kids

This is a fun recipe to make with kids, particularly the part where they get to fill the cookies with caramel pieces.

Topping Options

You can top these cookies with a pinch of flaky sea salt, a drizzle of caramel, or even some crushed crunchy pretzels for a sweet and salty combo.

Why This Recipe Works

This Salted Caramel Brownie Cookie recipe works because it perfectly balances the sweetness of the chocolate and the saltiness of the caramel. The texture of these cookies is reminiscent of the best brownie edges – crispy on the outside, chewy on the inside.

And the salted caramel center? It’s a pleasant surprise that takes these cookies from good to exceptional. Once you’ve tried these cookies, you won’t be able to resist making them again the next time you have a chocolate craving!
