What ingredients do you need for these fudgy brownie cookies?
- 2 cups semisweet chocolate chips
- ¼ cup butter, unsalted
- 2 ½ cups all purpose flour
- ¼ cup + 2 tablespoons cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup white sugar
- ¾ cup dark brown sugar
- 4 eggs
- ¼ cup milk
- 2 teaspoons vanilla extract
- Coarse Sea Salt

How do you make these chewy brownie cookies?
- Preheat the oven to 350 degrees Fahrenheit.
- In a saucepan add the butter. Once melted, add the chocolate chips. Stir continuously until the chocolate is completely melted and smooth. Take off the heat and set aside.
- In a separate bowl add the flour, cocoa powder, baking powder and salt. Whisk together until combined.
- Navigate back to the melted chocolate. Add the eggs, sugars, milk and vanilla extract to the chocolate. Whisk together until thoroughly combined.
- Pour the wet chocolate mixture into the dry ingredients. Use a spoon or rubber spatula to fold everything together until a brownie cookie batter is formed. Folding at this steps ensures the batter is not overmixed.
- Use a 1 inch scooper to scoop a ball of the brownie cookie batter and place on the parchment paper. Press a caramel into the center of the cookie dough. Take another half a teaspoon of the cookie dough to cover and seal the caramel inside the cookie.
- Repeat this with the rest of the cookie dough and caramels.
- Sprinkle the top of each cookie with a generous amount of coarse sea salt.
- Bake in the oven for 15 minutes or until a crinkly like brownie crust has formed on the cookies.
- Let cool for 5 minutes, serve and enjoy!
