These apple pie bars are made with fresh apples and has all of the amazing flavors of apple pie. This treat has apples sandwiched between a delicious shortbread crust.

These Apple Pie Bars aren’t anything that you would find at the store, you will only be able to enjoy them from the comfort of your own home by baking them. You won’t have any regrets though because these are the most delicious bars you’ll ever find!
Every single time I make these, they somehow disappear. I reach for one to have with my morning tea and they are *all gone*. Just writing about them makes me want make another batch. OMG. Let’s get into the ingredients shall we?

Ingredient Notes
Unsalted butter (½ cup, room temperature): Room temperature is doing real work here — not melted, not cold. Softened butter creams with the brown sugar into a light, slightly fluffy base that gives the shortbread its tender texture. If your butter is still cold, microwave in 10-second intervals until it yields to light pressure. Unsalted is specified so the salt level stays controlled — the crust doesn’t have any added salt, so using salted butter will change the flavor balance.
Light brown sugar (¼ cup, packed): The molasses in brown sugar gives the shortbread a slightly richer, more caramel-adjacent flavor than white sugar would. Pack it firmly into the measuring cup.
Pure vanilla extract (½ teaspoon): Goes into the crust, not just the filling. A small amount but it makes the shortbread smell and taste noticeably more complex.
All-purpose flour (1¼ cups in the crust, 2 tablespoons in the filling, ¾ cup in the topping): Measured by spooning into the cup and leveling — don’t scoop directly from the bag. Too much flour makes the shortbread dry and crumbly in the wrong way. The two tablespoons in the filling absorbs the juice the apples release during baking and prevents the filling from making the crust soggy underneath.
Apples (4 cups, peeled, cored, and thinly sliced — about 4-5 medium): Tart and firm is what you want. Granny Smith is the classic call. Honeycrisp works well. A mix of both is the best version. Avoid Macintosh or Red Delicious — they break down into mush during the 45-minute bake and you lose all texture in the filling. Slice them thin and as uniform as you can manage so they cook evenly.
Granulated sugar (¼ cup in the filling, ¼ cup in the topping): Sweetens the filling and draws out some of the apple juice, which then thickens with the flour into a light syrup. In the topping it adds crunch as it bakes, working alongside the brown sugar.
Light brown sugar (½ cup in the topping): Two sugars in the topping for depth — the brown sugar adds warmth and caramel notes that the granulated sugar alone doesn’t provide.
Ground cinnamon (1 teaspoon): Goes into the topping only. The primary spice in this recipe — warm and apple-forward without competing with the fruit.
Salt (½ teaspoon): In the topping only. Balances the sweetness and makes everything taste more complex. Don’t skip it.
Chilled butter (6 tablespoons, cut into ½-inch cubes): Cold butter is essential for the crisp topping — it needs to stay in distinct pieces as it’s worked into the dry ingredients so it bakes into crunchy clusters rather than a smooth, flat layer. Refrigerate the cubed butter again after cutting if your kitchen is warm.

How to Make It
Preheat your oven to 350°F and line an 8×8 pan with parchment paper, leaving overhang on two sides. Spray the parchment with cooking spray — this is what lets you lift the whole slab out cleanly at the end. In a large mixing bowl, beat the room temperature butter and brown sugar together until light and fluffy, 2-3 minutes. Add the vanilla and mix until combined. Add the flour and mix until the dough comes together — it will look crumbly rather than smooth, and that’s exactly right.
Press it evenly into the bottom of the prepared pan using your fingers or the bottom of a measuring cup, getting it into the corners and making the layer as even as you can. Bake the crust for 12-14 minutes until it’s slightly puffed and just barely starting to color at the edges. It won’t look fully done and it shouldn’t — it goes back in the oven. Pull it out and leave the oven on.
While the crust bakes, peel, core, and thinly slice the apples. In a large bowl, toss the apple slices with the 2 tablespoons of flour and the granulated sugar until every slice is evenly coated. Arrange them over the baked crust in an even layer across the whole pan. In a medium bowl, mix together the brown sugar, granulated sugar, flour, cinnamon, and salt for the topping.
Add the cold butter cubes and work them into the dry ingredients using a pastry cutter, two knives, or your fingertips until the mixture looks like coarse, uneven crumbs — some pea-sized butter pieces, some finer crumbs. Don’t overwork it into a smooth paste; the uneven texture is what creates the crunchy clusters in the finished topping. Spread the crumb topping evenly over the apple layer, covering it completely. Bake uncovered at 350°F for 45 minutes, until the topping is deeply golden and the apple filling is bubbling at the edges.
Don’t pull it early — the full 45 minutes is what gets you the caramelized filling and properly crisped topping. Let the bars cool completely in the pan — at least an hour, ideally two. Cutting into them warm gives you a crumbly, falling-apart result. Once fully cooled, use the parchment overhang to lift the whole slab out onto a cutting board and slice into 12 bars. SHORTBREAD CRUST

- In a large mixing bowl, beat together the butter and sugar until light and fluffy, about 2-3 minutes. Add vanilla and mix until combined. Add flour and mix until combined and dough is crumbly.
- Press dough evenly into bottom of prepared pan.
- Bake for 12-14 minutes, until dough is slightly puffed. Remove from oven and set aside, maintain oven temperature.
APPLE FILLING
- Peel, core and chop apples into slices. In a large bowl, combine apples, flour and sugar. Mix until apples are thoroughly coated.
- Arrange apples on baked crust.
CRISP TOPPING
- In a medium bowl, mix together first five ingredients. With a pastry cutter or two knives, cut in butter until mixture is crumbly. Spread topping over apples in an even layer.
- Bake uncovered at 350º F for 45 minutes, or until topping is golden and apple mixture is bubbly. Let cool, lift apple crisp using the extra parchment paper at the ends as handles, and cut into bars.

1. Use crisp or tart apples such as Granny Smith and Honeycrisp (or mix them!) Avoid sweeter apples (like Macintosh) as it will make the filling mushy (but still good lol).

I believe I prefer them over apple pie and that is saying something because my auntie who lived in Nebraska was the apple pie queen her apple pie was so delicious that one piece wasn’t enough she made her own crust and it was to die for just melted in your mouth It was so flakey plus so tender always perfect . Have eaten a lot of apple pies in my life of 74 yrs but hers was the best! Unfortunately she has passed and I have her recipe but it doesn’t even come close to her apple pie!
