Cosmic Cookies Instructions

Preheat oven to 350F.

In a large microwaveable bowl, melt the butter in the microwave. 

Add the brown sugar and granulated sugar to the butter.

If the butter mixture isn’t hot, you can add the eggs, vanilla extract and corn syrup in. Should the butter mixture be too hot, set aside for a couple minutes, then add the eggs, vanilla extract and corn syrup.

Slowly, in 3 stages; add the flour, cocoa, baking soda and salt and scrap down the bowl to make sure everything is incorporated.

Scoop into desired number of cookies, I did 16- 1 ¼ cookies and slightly press the cookies to be 1 to 1 ½ -inch high.

Bake for 10 to 12 minutes; you will want the cookies to look under cooked to be softer and chewier.

Chocolate Ganache and Decorating

While the cookies are baking put the 35% cream in a microwaveable bowl and microwave for 30 seconds.

Pour the cream over the chocolate and stir. If there are still chunks of chocolate, put the mixture in the microwave for 15 seconds, power at 50%, stir and repeat as necessary.

Once the cookies have cooled for 10 minutes, use a spoon to spread the chocolate ganache evenly over the cookies and top with the desired sprinkles.

Let set at room temperature or serve immediately.
