Ingredients
- 1 ½ lbs chicken thighs, skin removed
- ½ teaspoon oregano
- ½ teaspoon basil
- 1 tablespoon parsley
- Salt & pepper to taste
- ½ cup sundried tomatoes in oil (reserve 4 tablespoons oil)
- ½ cup chicken broth
- 3 tablespoons no salt butter
- 4 tablespoons minced garlic
- 1 cup parmesan cheese
- 1 cup heavy cream
- 2 cups baby spinach
Instructions
- In a skillet over medium heat, cook the garlic in the tomato oil and butter for about 1 minute
- Stir in the chicken broth and heavy cream and simmer until thickening
- Stir in the parmesan cheese and simmer 3-5 minutes
- Mix all the seasonings together and generously season both sides of the chicken thighs
- Place the chicken in the slow cooker
- Evenly spread the sundried tomatoes over the chicken
- Pour the sauce over the chicken
- Cover and cook on high for 3 hours or low for 6 hours
