I am obsessed with loaded potato soup. I mean, it is loaded with cheese, butter, cream and bacon. What’s not to love about all of that? This soup only takes 10 minutes to make – cooking time included! You literally throw everything in one pot and stir until it blends perfectly. The family will enjoy this one so much!
When it comes to the cold winter months, one of my favorite things to do is make soup! Nothing is more comforting than a warm soup on a cold day, and we all know that loaded potato soup always hits the spot.

large potatoes
bacon (cooked)
butter

This loaded baked potato soup is so great and so good in the cold winter months!
Ingredients
- 4-6 large potatoes
- 1 cup bacon (cooked)
- 4 tablespoons butter
- ½ onion, chopped
- 2 teaspoons garlic, minced
- ¼ cup flour
- 2 ½ cups milk
- 2 ½ cups chicken broth
- 1 cup cheddar cheese, shredded
- ¾ cup sour cream
- Salt & pepper to taste
- Green onions and additional cheese for garnish
Instructions
- Peel & cut potatoes into cubes, boil and drain, set aside
- In a large pot cook bacon until brown, remove from pot but leave the grease
- Cook onion in bacon fat and butter until soft
- Add in garlic, cook 1 minute
- Whisk in flour then slowly add in broth and milk
- Stir in cooked potatoes, sour cream, cheese, and ½ the cooked bacon
- Bring to a boil then remove from heat
- Fill a bowl, garnish with green onions-cheese-bacon, serve & enjoy!
