Ingredients

  • ⁃ 1/2 purple onion, diced

Instructions

  1. Set the instant pot to sauté. Once hot, add the oil and diced onion. Sauté the onion for 5-8 minutes or until translucent.
  2. Add water and powdered bouillon. Stir to mix.
  3. Add the whole chicken breast.
  4. Add the spices.
  5. Close the instant pot lid and seal the pressure valve. Cook on high pressure for 8 minutes. Release pressure when finished.
  6. Remove the chicken and shred.
  7. Set the instant pot to sauté. Once the soup is simmering, add the enchilada sauce, and cubed melting cheese. Stir until cheese is melted.
  8. Once the cheese is melted, whisk in the masa harina. Soup will continue to thicken as you stir.
  9. Once the soup is thick, fold in the shredded chicken.
  10. Serve the soup topped with fresh pico, shredded cheese, and tortilla strips. Extra garnish could be sliced jalapeños, chopped cilantro, and a dollop of sour cream.
