Not too long ago I published a post for some quick, easy adult beverages. With the world going nuts like it has I think we can all agree that we NEED one or two. Today I’ve got a quick and easy recipe for strawberry mimosas that is perfect for brunch or anytime.

Ingredients:

  • 2 cups orange juice (no pulp)
  • 1/2 cup fresh strawberries (stems removed)
  • 1 bottle champagne, Brut, Cava, or Prosecco (chilled)

I think us parents deserve a drink or two now that our kiddos, big and small, are due to be in-home with us until further notice. Sanity and patience in these trying days are certainly key, so when I feel like I’m on the verge of a meltdown there is no better way to unwind than with a cold drink of choice. 
 
That’s why Strawberry Mimosas are at the top of my list. Mimosas themselves have been a brunch staple for moms for years. They’re light, refreshing and have just the right amount of alcohol content to take the edge off while staying responsible. Traditional mimosas are one part champagne, one part chilled fruit juice.

  1. Can I use frozen strawberries instead of fresh? Absolutely! Just thaw them before use and expect a slightly sweeter taste.
  2. Is there a non-alcoholic substitute for champagne? Try substituting with a non-alcoholic sparkling wine or even sparkling water for a booze-free brunch beverage.

Easy Strawberry Mimosas

A super easy and fruity twist on the classic mimosa!

Ingredients

  • 2 cups orange juice (no pulp)
  • 1/2 cup fresh strawberries with stems removed
  • 1 bottle champagne Brut, Cava, or Prosecco (chilled)

Instructions

  1. Add orange juice to the blender.
  2. Add strawberries 
  3. Blend until smooth.
  4. Fill a champagne flute halfway with champagne.
  5. Top with orange-strawberry juice mixture.
  6. Garnish with strawberry.
