Whether you’ve been stuck at home since April or have been going about business as usual, I’m guessing you’ve been on the verge of pulling your hair out or in dire need of an adult beverage. Personally, I was recently in the kitchen concocting a recipe for the latter. Today I’ve got a fun and yummy recipe for pineapple screwdrivers that will make your brunch that much more amazing!

Let’s be honest, between my mama readers and myself, an ice cold drink is an excellent way to reduce, if not completely get rid of the urge to pull out our hair or in some cases even resort to a full-blown mama melt down!

Times are rough and as much as I see parents giving their kids a free pass right now because they don’t understand like the adults do, I also have to stick up for the parents too. Our lives are a never ending carousal of paying bills, going to work, getting kids to school, running errands, cooking meals, playing Dr. etc.

We deserve to handle ourselves with a little more care these days, just as much as the kids deserve it. Which is why I don’t feel even a little bad about sharing my recipe for these fabulous Pineapple Screwdrivers.

As many already know a screwdriver is a simple yet refreshing drink made from Vodka and Orange Juice. It takes no time at all from bottle to glass, and the ingredients are easy to come by. This one adds a bit of a tropical twist with the pineapple juice!

Some of my readers may already have orange juice on-hand since it’s a popular juice enjoyed by many, especially kids. Unfortunately, the kids are out of luck this time because I needed their juice to put together my recipe and I’ll tell you, it was worth it.

By utilizing simple unflavored vodka, orange juice and adding in some sweet pineapple, I made a screwdriver that was just like an old favorite but with a more modern twist. Mama’s (and Dads too!) you will love how simple and quick this drink can be made and enjoyed, even if you’re in need of a quick fix for avoiding a full-blown parental meltdown!

Pineapple Screwdrivers
Yield: 1 Cocktail

Pineapple Screwdrivers

Prep Time: 10 minutes
Total Time: 10 minutes

A super fun island twist on the classic screwdriver drink. Perfect for brunches or breakfast!

Ingredients

  • Ice
  • 2 slices fresh pineapple (divided)
  • 2 oz vodka
  • 3-4 oz orange juice (depending on glass)

Instructions

  1. In glass of choice muddle one slice of pineapple until crushed.
  2. Add ice and vodka.
  3. Then fill the rest of the glass with orange juice.
  4. Garnish with second slice of pineapple.
  5. Enjoy!
