Not sure how to store this pie? That is simple! You just need to cover it and keep it in the fridge. Because this pie uses ingredients that are cold, it needs to be kept cold. The lemon flavor also tastes better when it is refrigerated.

If you wanted to freeze this pie, you could. Just make sure it’s covered well, so that it doesn’t get freezer burnt. Just add the extra cool whip and lemon zest AFTER you’ve unthawed it for serving.

Easy Lemon Supreme Pie

This amazing lemon supreme pie has a great cream cheese filling and is perfect for holidays.

Ingredients

  • 1 deep dish pie crust, cooked & cooled
  • Filling:
  • 1 ¼ cups sugar - divided
  • 6 tablespoons cornstarch
  • ½ teaspoon salt
  • 1 ¼ cups water
  • 2 tablespoons butter
  • 2 teaspoons lemon zest
  • 4-5 drops yellow food coloring (if desired)
  • ½ cup lemon juice
  • Cream Cheese Filling:
  • 11 oz cream cheese, softened
  • ¾ cup powdered sugar
  • 1 ½ cup cool whip
  • 1 tablespoon lemon juice

Instructions

  1. Filling:
  2. In a saucepan combine ¾ cup sugar, cornstarch, salt, water - stir until smooth and bring to a boil over medium high heat
  3. Reduce heat and stir in remaining sugar, cook 2 minutes 
  4. Remove from heat and stir in butter, lemon zest, and food coloring if using 
  5. Gently stir in lemon juice and set aside to cool to room tempurature 
  6. Cream Cheese Filling:
  7. Beat together cream cheese, powdered sugar, and lemon juice until smooth 
  8. Fold in cool whip then place in cooled pie shell spreading evenly 
  9. Pour cooled lemon filling over cream cheese mixture
  10. Refrigerate overnight
  11. Serve with additional cool whip and lemon zest 
  12. Enjoy!
