In order to make the cream cheese filling, you need just a few ingredients like cream cheese, powdered sugar, cool whip, and lemon juice. Mixed together, you’ll get the most amazing filling ever!

Tips & Tricks:

  • When making the lemon mixture, always use fresh lemon juice and lemon zest for an authentic lemon flavor. Roll pie dough on a lightly floured surface to prevent sticking. Use pie weights or uncooked rice over a double thickness of foil when baking the unpricked pastry shell to avoid bubbles. Cool the baked pastry shell on a wire rack for the best texture.

  • Lemonade Pies: Use lemonade concentrate instead of lemon juice for a sweeter touch.Creamy Dream: Add layers of lemon curd in between the cooled lemon filling and the reserved cream cheese mixture.

Where to Serve:

  • Special Occasions: This pie stands out during birthdays or anniversaries.
  • Family Gathering: A guaranteed family favorite that all ages will enjoy.
  • Any Time of Year: Although it has a summer vibe, this pie is delightful any season.

Wrap the pie in plastic wrap and refrigerate. Consume within 2-3 days for the best lemony freshness.

Common Problems and How to Avoid Them:

  • Soggy Crust: Pre-bake the pie shell until it’s golden brown to prevent sogginess.
  • Filling not setting: Ensure the cornstarch mixture cooks on medium heat until thickened. It helps in setting the pie.

Interested in making this pie? If so, I’m going to show you what you’ll need for this pie and how to make it. Don’t worry, it’s very simple. The ingredients you’ll need consist of:

Lemon Supreme Pie: Importance of Each Ingredient

Deep Dish Pie Crust:

  • Foundation: It serves as the base and container for the luscious fillings. A deep-dish ensures there’s ample space for both the lemon and cream cheese fillings.
  • Flavor & Texture: A perfectly baked pie crust adds a buttery flavor and a flaky texture that contrasts beautifully with the creamy fillings.

  • Sweetness: Sugar balances out the tartness of the lemon juice, ensuring the pie isn’t overly sour.
  • Texture: Sugar also contributes to the smooth texture of the fillings.

  • Thickening: Cornstarch acts as a thickening agent, especially important for the lemon layer to set properly. Without it, the filling might be too runny.

  • Flavor Enhancer: Even in desserts, a pinch of salt can enhance and balance out flavors.

  • Consistency: Water is essential to combine sugar and cornstarch and achieve the desired consistency for the filling.

  • Richness & Flavor: Butter adds a rich, creamy texture and flavor to the fillings. It also helps in achieving that smooth mouthfeel.

Lemon Zest:

  • Flavor Boost: Lemon zest packs a lot of lemon flavor, intensifying the lemony notes in the pie without adding extra liquid.

Yellow Food Coloring:

  • Visual Appeal: While not affecting the flavor, a touch of yellow food coloring enhances the pie’s visual appeal, making the lemon layer vibrant and appetizing.

Lemon Juice:

  • Tartness & Flavor: Fresh lemon juice is the star of the pie, providing the signature tartness and bright, refreshing flavor.
