Easy Lemon Poppyseed Scones Recipe
These lemon poppyseed scones are delicious and great with your morning tea or coffee!
Ingredients
- 2 cup flours
- ¼ cup white granulated sugar
- ⅛ cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- 2 tablespoons poppy seeds
- ¼ cup lemon juice
- ¼ cup milk
- 1 teaspoon vanilla extract
- Topping before oven:
- Extra Tablespoon of butter, melted
- Extra white sugar
- Frosting:
- Lemon glaze
Instructions
- Prep a baking sheet with parchment paper.
- Preheat the oven to 400 degrees fahrenheit.
- In a medium sized mixing bowl add the flour, brown sugar, white sugar, baking soda and baking powder together. Whisk until the dry ingredients are combined
- Add in the cubed butter and use clean hands to squeeze the butter and dry ingredients together to create a crumbly mixture
- Mix in the poppy seeds.
- Add in the egg, lemon juice, milk and vanilla extract, and mix together until a dough forms
- On a clean flat surface transfer the dough to it and form a round of the dough to about a 10x10 inch disc.
- Cut the dough into 6 equal pieces
- Transfer these 6 pieces to the prepared parchment covered baking sheet.
- Take the tablespoon of butter thats melted and brush each scone with it and sprinkle some white sugar on top.
