  • 1 lb brioche bread, cut into cubes
  • 1 ¾ cup heavy cream
  • 1 ¾ cup milk

  • ¼ cup unsweetened cocoa powder

Instructions

  1. Preheat the oven to 350 degrees fahrenheit. Place the cubed bread onto a baking sheet and bake for 15 minutes until lightly toasted, stirring once halfway through.
  2. In a bowl add one cup of the chocolate chips to a bowl and set aside the other ½ cup for later.
  3. Heat the milk and heavy cream together in a saucepan until hot and steaming. Pour over the chocolate chips and let sit for 5 minutes. Mix together until everything melts together and is smooth. Set aside.

  7. Place half of the bread cubes in the 9x13 baking dish. Sprinkle ¼ cup of the set aside chocolate chips and then pour half of the chocolate custard over the bread as well. Stir to coat everything evenly.
  8. Repeat this with the second half of the bread, chocolate chips and custard, placing on top of the first layer. Mix everything together once more so the bread is coated evenly.
  9. Cover with foil and let the bread sit to soak up most of the custard for 45 minutes.
  10. Bake in the oven, covered, for 45-50 minutes or until a toothpick inserted comes out with only a few moist crumbs.
  11. About 10 minutes before the bread pudding is done baking, make the ganache.
  12. In a saucepan, heat the heavy cream until hot and steaming.
  13. Pour over a bowl of the chocolate chips. Let sit for 3 minutes. Whisk together until smooth and then add the vanilla extract, whisking again until combined.
  14. Once the bread pudding is finished baking, drizzle the ganache all over the bread pudding, using as much or as little as desired.
