Using buttery brioche bread, semi-sweet chocolate chips, and a blend of spices, this recipe creates a luscious treat that’s perfect for chocolate lovers and dessert aficionados alike.

FAQs

Q: Can I use a different type of bread? A: Absolutely! While brioche bread adds a luxurious texture, you can also use french bread, sourdough, or even day-old bread for a different twist.

Q: How do I know when the bread pudding is done baking? A: The bread pudding is done when it’s puffed up and set, and a knife inserted in the center comes out mostly clean.

Tips and Tricks

  • For the best texture, use bread that’s at least a day old as it absorbs the egg mixture better.
  • To enhance the chocolate flavor, consider using a mix of semi-sweet and bittersweet chocolate.
  • If you’re making this for the first time, keep an eye on your oven as baking times can vary.

Variations

  • Dark Chocolate Bread Pudding: Substitute semi-sweet chocolate chips with dark chocolate chips for a deeper chocolate flavor.
  • Cinnamon Raisin Twist: Add raisins and extra cinnamon for a spiced version.

Where to Serve

This chocolate bread pudding is perfect for special occasions, holiday gatherings like Christmas morning, or as a comforting treat on a cold evening. It’s also a great way to impress guests at dinner parties.

Storage

Store leftover bread pudding in the refrigerator, covered with plastic wrap or aluminum foil, for up to 3 days. Reheat in the oven or microwave before serving.

Common Problems and How to Avoid Them

  • Soggy Bread Pudding: To avoid this, make sure your bread cubes are dry enough to absorb the custard without becoming mushy.
  • Burning on Top: If the top is browning too quickly, cover it with aluminum foil for the remainder of the baking time.

Tips for Making This Recipe with Kids

  • Let kids help with tearing the bread into cubes and mixing the chocolate chips into the batter.
  • They can also sprinkle extra chocolate chips on top before baking.

Topping Options

  • Fresh Whipped Cream: Adds a light, creamy contrast to the rich dessert.
  • Powdered Sugar: For a sweet, decorative finish.
  • Scoop of Vanilla Ice Cream: Melts into the warm pudding for an extra indulgent treat.

Ingredients

  • Ingredients:
  • Bread Pudding
  • 1 lb brioche bread, cut into cubes
  • 1 ¾ cup heavy cream
  • 1 ¾ cup milk
  • 1 ½ cups semi sweet chocolate chips
  • 4 eggs
  • 2 egg yolks
  • 1 cup white granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • Ganache
  • ½ cup heavy cream
  • ½ cup semisweet chocolate chips
  • ¼ teaspoon vanilla extract
  • Topping
  • Extra chocolate chips
  • Powdered Sugar

Instructions

  1. Preheat the oven to 350 degrees fahrenheit. Place the cubed bread onto a baking sheet and bake for 15 minutes until lightly toasted, stirring once halfway through.
  2. In a bowl add one cup of the chocolate chips to a bowl and set aside the other ½ cup for later.
  3. Heat the milk and heavy cream together in a saucepan until hot and steaming. Pour over the chocolate chips and let sit for 5 minutes. Mix together until everything melts together and is smooth. Set aside.
  4. In a large mixing bowl add the eggs, egg yolks, white sugar, cocoa powder, vanilla, cinnamon, nutmeg and salt. Whisk everything together until smooth.
  5. Slowly add in the melted chocolate, whisking as you pour into the egg mixture.
  6. Once combined, this is now the chocolate custard that will coat the bread.
  7. Place half of the bread cubes in the 9x13 baking dish. Sprinkle ¼ cup of the set aside chocolate chips and then pour half of the chocolate custard over the bread as well. Stir to coat everything evenly.
  8. Repeat this with the second half of the bread, chocolate chips and custard, placing on top of the first layer. Mix everything together once more so the bread is coated evenly.
  9. Cover with foil and let the bread sit to soak up most of the custard for 45 minutes.
  10. Bake in the oven, covered, for 45-50 minutes or until a toothpick inserted comes out with only a few moist crumbs.
  11. About 10 minutes before the bread pudding is done baking, make the ganache.
  12. In a saucepan, heat the heavy cream until hot and steaming.
  13. Pour over a bowl of the chocolate chips. Let sit for 3 minutes. Whisk together until smooth and then add the vanilla extract, whisking again until combined.
  14. Once the bread pudding is finished baking, drizzle the ganache all over the bread pudding, using as much or as little as desired.
  15. Top with any extra toppings, such as powdered sugar, extra chocolate chips, ice cream or fruit and enjoy!
