Air Fryer S’mores Cookies
Air Fryer S’mores Cookies – Gooey, Chocolatey, and Air Fried!
S’mores and cookies are two of my family’s favorite treats, so combining them into one recipe was a no-brainer. These Air Fryer S’mores Cookies are soft, chewy, and stuffed with all the graham cracker, marshmallow, and chocolate goodness you love from a campfire s’more, without leaving your kitchen. They’re quick, easy, and the perfect sweet fix when you want something special fast.

Ingredients and Why They Work
Brown sugar adds depth and a caramel-like sweetness that makes these cookies rich and chewy. Granulated sugar balances the flavors and helps the cookies spread. Butter gives that soft, melt-in-your-mouth texture while keeping the dough buttery and delicious. Eggs bind everything together and add moisture. Vanilla extract rounds out the flavor with a warm, sweet note. Flour is the base that gives the cookies structure. Salt balances the sweetness, while cornstarch keeps the cookies soft and tender. Baking soda ensures they rise just enough for that classic cookie shape. Chocolate chips bring little bursts of chocolatey goodness throughout the dough. Graham crackers add crunch and that signature s’mores flavor. Hershey’s chocolate bars bring nostalgia and extra melty pockets of chocolate. Mini marshmallows give you that gooey, toasty s’mores center that makes these cookies unforgettable.

How to Make Air Fryer S’mores Cookies
Preheat your air fryer to 350 degrees. In a mixing bowl, cream together the butter and sugars until smooth. Add the eggs and vanilla and mix until combined. In a separate bowl, whisk the flour, salt, cornstarch, and baking soda, then slowly add it into the wet mixture. Fold in the chocolate chips, most of the graham crackers, most of the mini marshmallows, and broken pieces of Hershey’s bars. Scoop large balls of dough, place them on parchment in the air fryer basket with room to spread, and air fry for about 8 minutes. Pause to add a few extra marshmallows, chocolate pieces, and cracker bits on top, then finish cooking for 3 more minutes until golden brown. Cool slightly on a rack before digging in—though warm and gooey is definitely the best way to enjoy them.

My Family Story Behind This Recipe
I made these one Friday night when we were all craving something sweet but didn’t want to wait for the oven. The smell of chocolate and toasted marshmallow had everyone hanging out in the kitchen, watching the air fryer timer like it was the big game. When I pulled them out, my kids went straight in, marshmallow strings stretching everywhere, and my husband declared them “better than campfire s’mores.” Now, they’ve become our go-to treat when we want something quick but fun, especially on game nights or cozy weekends.

FAQs About Air Fryer S’mores Cookies
Can I make these without an air fryer? Yes, you can bake them in a regular oven at 350 degrees until golden, about 10–12 minutes. Can I use big marshmallows instead of mini? It’s best to stick with mini marshmallows—they melt more evenly. Can I prep the dough ahead of time? Absolutely, just store it in the fridge for up to 48 hours before cooking.
Fun Places to Serve These Cookies
They’re perfect for family movie nights, after-school snacks, holiday dessert trays, or game day spreads. They also make a great surprise for potlucks or bake sales since they’re unique but still comforting and familiar.

These cookies aren’t just chocolate chip cookies with marshmallows tossed in—they’re built to taste like the real s’mores experience. Adding graham cracker crumbs directly into the dough brings out that authentic flavor, while topping each cookie mid-bake with more chocolate, crackers, and marshmallows makes them bakery-worthy. Plus, they’re air fryer-friendly, which means you can whip up a batch in minutes without heating up the whole kitchen.
