Why Each Ingredient Works

  • Chicken breasts give you a tender base that rolls beautifully around the filling.
  • Salt and black pepper season the chicken so every bite has flavor.
  • Paprika adds warmth and color to the breading.
  • Ham brings that classic salty, savory cordon bleu flavor.
  • Swiss cheese melts perfectly and adds creamy richness.
  • Dijon mustard gives the sauce a little zip and depth.
  • Sour cream smooths out the Dijon and makes the sauce creamy.
  • Minced garlic adds bold flavor to the aioli.
  • Flour helps the egg wash stick to the chicken.
  • Cornstarch makes the coating extra crisp in the air fryer.
  • Garlic and onion powder boost the flavor of the breading.
  • Eggs help the breadcrumbs cling for that crunchy crust.
  • Panko crumbs create a light, crispy coating.

How to Make Air Fryer Chicken Cordon Bleu

  1. Slice each chicken breast in half horizontally to butterfly it open. Cover with plastic wrap and gently pound until about ¼-inch thick so it rolls easily.
  2. Lay one slice of ham onto each piece of chicken, then add three half-slices of Swiss cheese on top.
  3. Roll the chicken up tightly around the filling and secure with toothpicks. Chill in the fridge while you prep the breading—this helps them hold their shape.
  4. Set up three bowls: one with whisked eggs, one with panko crumbs, and one with flour, cornstarch, and spices mixed together.
  5. Dredge each chicken roll in the flour mixture, then dip into the egg wash, and finally coat generously with panko.
  6. Place the chicken into the air fryer basket and spray lightly with oil.
  7. Cook at 370°F for 9 minutes, flip carefully, spray again, and cook for another 9 minutes until golden and cooked through.
  8. While the chicken cooks, mix Dijon mustard, sour cream, and minced garlic to make the creamy Dijon aioli.
  9. Remove toothpicks, garnish with parsley, and serve with a generous drizzle of sauce.

The first time I made this, I didn’t tell my family what was for dinner—I just plated it up and set it on the table like we were at a restaurant. My husband literally asked what occasion we were celebrating. The kids thought it was “grown-up food” until they cut into it and saw the melty cheese. Suddenly everyone was quiet, plates were clean, and I was asked if this could be added to the “special dinner” list. Fancy surprise success.
