  1. Start by making your blueberry syrup: add the blueberries, granulated sugar, and vanilla to a saucepan over medium-high heat. Let it come to a boil until the berries burst and release their juices.
  2. Lower the heat to medium-low and let the mixture simmer for about 5 minutes so it thickens slightly. Set aside to cool.
  3. In a mixing bowl, combine the cream cheese, ½ cup of French vanilla creamer, and ⅓ cup of your freshly made blueberry syrup. Whisk until the mixture is completely smooth and creamy with no lumps.
  4. Prep your brioche by slicing each piece down the middle—but don’t cut all the way through. You want a pocket for the filling. Make sure the bread is dry or lightly toasted so it doesn’t get soggy.

Ingredients

  • 2 cups of fresh blueberries, frozen or thawed.
  • 1/4 cup of granulated sugar
  • 1 teaspoons vanilla
  • 1 8oz brick of cream cheese
  • 1 cup French vanilla coffee creamer
  • 8 slices of thick-cut brioche bread, dried out or slightly toasted.
  • 4 eggs
  • 1/4 cup confectioners sugar
  • 1 cup pancake syrup
  • Whipped cream, optional topping

Instructions

  1. In a saucepan over medium-high heat, add blueberries, granulated sugar, and vanilla. Bring to a boil or until blueberries have burst open. Drop heat to medium-low and allow to simmer for 5 minutes. Remove and set aside.
  2. In a mixing bowl, add cream cheese, 1/2 cup vanilla creamer, and 1/3 cup of blueberry syrup. Whisk until fully incorporated and creamy. 
  3. Cut the brioche slices in half but not all the way through. Make sure the slices of brioche are dried. This helps prevent soggy toast. You can leave them to air dry for a few hours or toast them in the toaster for 30-45 seconds.
  4. Scooping a spoonful of cream cheese filling, add to the center of the sliced open pocket of the brioche. Gently press the slice of brioche to fill the whole pocket without squirting the filling out. 
  5. In a flat dish, beat the eggs with 1/2 cup of vanilla creamer.
  6. Dredge each piece of brioche in the egg wash for 10 seconds on each side. Only dredge the slices you will cook in a batch. 
  7. Place the stuffed brioche on parchment paper in the air fryer basket and cook at 350°f for 10 minutes, flipping halfway. 
  8. Remove toast and let cool. Cream cheese filling will be hot. 
  9. Plate the toast and top with remaining blueberry syrup, confectioners sugar, whipped Cream, and or pancake syrup. 
  10. Enjoy.
