Steak and Avocado Rice Bowl
I decided to create a Steak Veggie and Avocado Rice Bowl because… well don’t those ingredients sound amazing together?! My hubby wasn’t in the mood for steak so he added grilled chicken instead! Truth be told you don’t have to add meat at all, this could easily be a veggies and avocado rice bowl on its own because the rice is the main star!

Ingredient Notes
Rice (1 cup dry, cooked): Any long-grain white rice works — jasmine is the best call for a rice bowl because it has a slightly floral aroma and stays fluffy rather than clumping. Cook it while you prep the vegetables so everything is ready at the same time.
Green and red peppers (1 of each, julienned): Julienned means cut into thin matchstick strips — slice the pepper in half, remove the seeds and ribs, then cut lengthwise into strips about ¼ inch wide. Uniform strips cook more evenly than chunks and look more intentional in the bowl presentation.
Small onion (1, sliced): Thin half-moon slices. Cook it with the peppers until soft and slightly golden — the onion adds sweetness as it caramelizes that raw onion doesn’t have.
Haas avocado (1 small, sliced): The only avocado variety worth using for this — it has the right creamy texture and rich flavor. Ripe means it yields to gentle pressure without feeling mushy. Add the avocado last, after everything else is in the bowl, so it doesn’t turn brown from heat contact.
Plum tomato (1, diced): Added raw at the end as a fresh contrast to the sautéed peppers. Plum tomatoes are less watery than other varieties, which keeps the bowl from getting soggy.
Steak or chicken (optional): Season simply — salt, pepper, garlic powder — and cook separately in a hot skillet or on a grill pan before slicing. Rest for 5 minutes before slicing against the grain. As Nellie said in the original post, this works just as well without any protein at all.
Mexican blend shredded cheese (optional garnish): A light sprinkle, not a heavy layer. It’s a finishing touch rather than a structural ingredient.
How To Make It
Start the rice first — it takes about 20 minutes and everything else comes together in that time.
While the rice is cooking, prep your vegetables. Julienne the peppers into thin strips (cut them in half lengthwise, remove the seeds and ribs, then slice into strips about a quarter inch wide), and slice the onion into thin half-moons. Dice the tomato and set it aside — it goes in raw at the end, not cooked.
Get a skillet going over medium heat with a drizzle of olive oil. Add the peppers and onion and let them cook for about 8-10 minutes, stirring occasionally, until they’re soft and starting to get a little golden at the edges. Season with salt and pepper. This is where most of the flavor in the bowl comes from, so don’t rush it — you want the onion to sweeten up properly.
If you’re adding steak or chicken, cook it separately in a hot skillet or on a grill pan while the vegetables are going. Season it simply — salt, pepper, garlic powder is enough. For chicken, you’re looking for 165°F internal temperature. For steak, cook it to whatever doneness you prefer. Let it rest for 5 minutes before slicing, and slice against the grain. My husband went with grilled chicken the first time I made this — both proteins work, and honestly, the rice and vegetables are good enough on their own that skipping the protein entirely is a real option.
When everything is ready, build the bowl. Rice goes in first. Spoon the sautéed peppers and onion on top. Arrange the avocado slices around the vegetables — add these last so they don’t brown from the heat of the other components. Add the diced tomato. If you’re using steak or chicken, layer it on top. Finish with a light sprinkle of Mexican blend cheese if you want it.
Eat it right away while the rice and vegetables are still warm and the avocado is fresh.
