Easy Slow Cooker Chicken Tortilla Soup

This slow cooker chicken tortilla soup is perfect for anytime! Also included with this recipe is a spicy chipotle crema that is the perfect compliment!


  • 1 cup onion, chopped
  • 4 large garlic cloves, minced
  • 8 cups room temperature low-sodium chicken or vegetable stock
  • 1-1.5 lb chicken breasts
  • 2 (10.5 oz) cans of diced tomatoes with green chiles
  • 1 cup of frozen corn
  • 1 jalapeno, diced
  • 1.5 Tbsp chili powder
  • 2 tsp ground cumin
  • 2 tsp oregano (Mexican oregano preferred)
  • Juice of 2 limes
  • Kosher salt to taste (about 2 tsp)
  • Spicy Chipotle Crema
  • 1 cup sour cream
  • 2 chipotle peppers in adobo, chopped finely
  • 2 Tbsp of milk (half and half or table cream)
  • ½ tsp salt


  1. Add the onion, garlic, stock, chicken, Rotel or alternative, corn, chopped jalapeno, chili powder, cumin, and oregano to a 6-quart crock-pot and mix well to combine all of the ingredients.
  2. Cook on low for 3-4 hours until the chicken is cooked.
  3. Take chicken breast out and shred with two forks and return chicken back to the slow cooker.
  4. Stir in the lime juice and salt to taste.
  5. Ladle the soup into bowls and garnish with favorite toppings such as tortilla strips, avocado, cheese, tomato, cilantro, and chipotle crema.
  6. For Spicy Chipotle Crema:
  7. If making the crema, add the sour cream, chopped chipotle peppers, milk, and salt to a bowl and mix to combine. Set aside.
