The Best Shrimp Paella Recipe
This Seafood Paella is so good and easy to make for a weeknight dinner!
Ingredients
- 4 Tbsp vegetable oil
- 1 medium onion, diced
- 4 cloves garlic, diced
- 1 red bell pepper, diced
- 1 Tbsp Tomato Puree
- 1/4 Tsp pepper
- 1 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp saffron, ground with mortar and pestle (substitute with 1/4 tsp ground turmeric)
- 2 1/2 C Chicken stock
- 1 C Spanish paella rice
- 8-9 Large shrimp
- 8-9 Mussels
- Optional - Lemon and Parsley for garnish
Instructions
- Heat vegetable oil in large round pan and add onions. Cook for 1 minute on medium heat. Then add garlic and red pepper. Cook another 2 minutes.
- Stir in tomato paste and spices. Add stock and cook on high until boiling, stirring occasionally.
- Spread rice evenly across pan. Once rice is added, do not stir. Reduce heat to low. After 10 minutes, lay shrimp on top of the paella. Cook for 5 minutes, flip the shrimp, and cook another 5 minutes.
- Once shrimp have been flipped, steam mussels in a separate pan for 1-2 minutes.
- Top finished paella with mussels.
- Optional - garnish with fresh parsley and lemon slices.
Notes
- The ideal pan for this dish is a paella pan, but you can use any large metal skillet. Do not use a non-stick pan.
- Medium-grain white rice can be used instead, but if you can get your hands on paella rice, it makes a big difference in both taste and texture. I didn't believe that at first and used regular white rice the first few times I made this dish. Now that I've tried it with the traditional round rice, I won't be going back. I found this bag at World Market.
- Saffron is used in the traditional recipe, but it's pretty expensive. Turmeric works fine instead. It will still give the dish the beautiful yellow color, and while it doesn't taste quite the same, it's a pretty close match.
- Don't skimp on the oil. Since you're not supposed to stir after the rice goes in, it's easy to burn the bottom if you don't use enough oil.
- Fresh mussels are ideal, but they don't make as much of a difference in the dish as fresh shrimp do. Frozen pre-cooked mussels are a good alternative to make the dish a little easier. Just heat them up in the microwave and this becomes a one-pan dish!
