Easy St. Patricks Day Rainbow Pancakes
These rainbow pancakes are so fun to make to celebrate St. Patrick’s Day or anytime! Easy fun breakfast for the family!

This is the St. Patrick’s Day breakfast I make when I want the kids to feel like the morning is special without actually spending the morning cooking. Frozen funfetti pancakes, a can of whipped cream, some rainbow sprinkles, and one candy rainbow — that’s the entire shopping list. The whole setup takes about 10 minutes, and the kids can do most of the assembly themselves.
The whipped cream becomes the clouds. The candy rainbow arches over the top. It looks like something you planned, which is the whole point.
WHAT YOU’RE MAKING
Two rainbow pancake stacks, each built from 3 mini funfetti pancakes stacked in a loose arc shape, topped with whipped cream “clouds” on either side, rainbow sprinkles pressed into the cream, and a candy rainbow candy piece arching between the two cloud mounds. The finished plate looks festive enough for St. Patrick’s Day morning without requiring any baking or special equipment.
This is an assembly recipe — the only cooking involved is heating the frozen pancakes. Everything else is stacking and decorating.
INGREDIENT NOTES
Frozen funfetti mini pancakes (6 per serving): Pillsbury Funfetti Mini Pancakes are the most widely available and are sold in the frozen breakfast aisle at most major grocery stores. The funfetti base (white pancake with rainbow sprinkles baked in) is what gives these the colorful, festive look even before the toppings go on. Regular frozen mini pancakes work as a substitute — the pancakes will just be plain rather than confetti-speckled.
Candy rainbow (1 per serving): Look for rainbow-shaped candy in the seasonal candy aisle around St. Patrick’s Day, or in the cake decorating section of craft stores year-round. Airheads Rainbow Candy Strips or similar rainbow-arched candy pieces work well. If you can’t find a rainbow-shaped candy, you can create the arch effect with a row of different-colored gummy candies arranged in an arc.
Whipped cream: Canned whipped cream (Reddi Whip or store brand) is easiest for this project — you can pipe the cloud shapes directly from the can. If making homemade whipped cream, put it in a zip-lock bag with a corner snipped for a makeshift piping bag.
Rainbow sprinkles: Standard rainbow nonpareil sprinkles or rainbow jimmies both work. Press them gently into the whipped cream immediately after piping — they won’t stick once the cream starts to settle.
STEP-BY-STEP WALKTHROUGH
Heat the pancakes Heat the frozen funfetti mini pancakes according to the package directions — microwave is fastest (usually 60–90 seconds for 6 pancakes) or toaster oven at 350°F for about 5 minutes. The pancakes should be warm and just slightly soft, not soggy.
Stack and arrange Arrange 3 pancakes in a slightly fanned arc on each plate — overlapping them slightly like a rainbow curve rather than stacking them straight up. This gives the finished plate the rainbow shape before the candy even goes on.
Pipe the clouds Spray two generous mounds of whipped cream on either end of the pancake arc — one on the left side, one on the right. These are the clouds the rainbow will “emerge from.” Make them full and rounded.
Add sprinkles Immediately press rainbow sprinkles into both whipped cream clouds while the cream is still fresh. Don’t wait — the cream settles quickly and the sprinkles won’t adhere as well after a minute or two.
Place the rainbow Arch the candy rainbow piece between the two whipped cream clouds, pressing each end gently into the cream to anchor it. It should curve over the top of the pancake stack like a rainbow over clouds.
Serve immediately These are best served right away — the whipped cream will start to deflate after about 10–15 minutes and the candy may start to bleed color into the cream if left sitting.
TIPS
Let the kids do the decorating. This is genuinely one of the best recipes for kid participation — there’s no heat involved in the assembly steps, and squirting whipped cream is basically the best job in any kitchen. Set up the plates and let them build their own rainbows.
Work quickly with the whipped cream. Canned whipped cream deflates faster than you think. Have everything prepped and ready — pancakes heated, sprinkles in a bowl, candy rainbow out of the wrapper — before you start piping.
Fan the pancakes into an arc. Instead of stacking all 3 straight up, slightly offset each one in a curved arrangement. This gives the stack a rainbow shape that makes the candy arch look intentional when it goes on top.
Make it a full St. Patrick’s Day breakfast spread. Serve alongside green scrambled eggs (one drop of green food coloring in the eggs before scrambling), green juice or lime sparkling water, and gold coin chocolates on the side.
Can’t find funfetti mini pancakes? Pillsbury and other brands are usually in the frozen breakfast aisle. If your store doesn’t carry them, substitute regular mini pancakes and add rainbow sprinkles on top of the stack before the whipped cream — you’ll get the colorful effect without the funfetti base.
VARIATIONS
Homemade funfetti pancakes: Make your favorite pancake batter and fold in rainbow sprinkles before cooking. Use a small ladle to make mini-sized pancakes (about 3 inches each). The homemade version takes more time but the pancakes are thicker and fluffier.
Green pancakes for St. Patrick’s Day: Add 2–3 drops of green food coloring to your pancake batter for all-green pancakes. Use green whipped cream (add green food coloring to the can or make green homemade whipped cream) and still arch the rainbow candy on top.
Full rainbow color stack: Make a batch of pancakes in each rainbow color — red, orange, yellow, green, blue, purple — using food coloring. Stack one of each color in order for a full rainbow stack. More involved but completely stunning for a St. Patrick’s Day brunch.
Waffle version: Use frozen funfetti mini waffles instead of pancakes. The waffle texture holds up a little better under the whipped cream.
