  • 1 box lemon cake mix
  • 2 packets rapid rise yeast
  • 2 ½ cups warm water
  • 1 teaspoon salt
  • 5 cups flour
  • 1 cup butter, soft
  • 1 cup sugar
  • Zest of 1 lemon
  • 1 package lemon instant pudding
  • 8 oz cream cheese, soft
  • ¼ cup butter, soft
  • 2 teaspoons lemon juice
  • 3 ½ - 4 cups powdered sugar
  • 3 - 5 tablespoons of milk


  1. In a large bowl mix the cake mix, flour, and salt until well combined 
  2. Mix the yeast in the warm water until dissolved 
  3. Pour the yeast mixture in the dry mixture and combine well 
  4. Cover tightly and let rise 1 hour 
  5. Punch, recover, and let rise and additional 30 minutes 
  6. Divide the dough in half, and roll each half to a rectangle 
  7. Brush on the soft butter 
  8. In a small bowl combine the sugar, lemon zest, and instant pudding then sprinkle ½  over the butter 
  9. Roll tightly and cut into 12 equal size pieces a
  10. Place the pieces in a 13x9 baking dish sprayed with nonstick spray, cover and let rise 30 minutes 
  11. Repeat this process with the other half of dough 
  12. Preheat oven to 350 degrees and bake for 20-25 minutes 
  13. Mix the cream cheese, butter, and lemon juice
  14. Add in the powdered sugar and milk 1 tablespoon at a time if needed 
  15. Ice the warm rolls
