Sometimes when you make a whole chicken, or buy a rotisserie chicken, there can be a lot of leftovers! Today I’ve got a great recipe that you can use for that leftover roast chicken to make a delicious lunch!

How long does cooked chicken salad last in the fridge?

Cooked chicken salad will last in the fridge for about 3-4 days. If you are planning on eating it later than that, I would recommend freezing it.

What ingredients do you need for this leftover chicken salad recipe?

2 chicken breasts, cooked and chopped

2 cup dried cranberries

1 cup Mayonnaise 

1 cup (2 stalks) celery, diced

¾ cup pecans

2 tbsp honey mustard

2 tsp apple cider vinegar

½ tsp salt

½ tsp black pepper

¼ tsp onion powder

¼ tsp garlic powder

You won’t need any red onions, olive oil, lemon juice, lime juice or bell pepper for this classic recipe. It’s a hearty lunch with a great flavor that you can even serve on sandwich bread, pita pockets or a tortilla wrap.

Easy Leftover Chicken Salad Recipe

Total Time: 1 hour 10 minutes

This super easy chicken salad recipe is delicious and the perfect way to use leftover chicken!

Ingredients

  • 2 chicken breasts, cooked and chopped
  • 2 cup dried cranberries
  • 1 cup Mayonnaise
  • 1 cup (2 stalks) celery, diced
  • ¾ cup pecans
  • 2 tbsp honey mustard
  • 2 tsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp onion powder
  • ¼ tsp garlic powder

Instructions

  1. Chop up the chicken and celery.
  2. You can use leftover rotisserie chicken for this process as well.
  3. Add all ingredients to a bowl and mix well.
  4. Cover with plastic wrap and chill for 45 minutes. (optional)
  5. Best if served chilled 

Notes

You can substitute grapes for the dried cranberries.

You can substitute walnuts or almonds for the pecans.

I used Dukes Real Mayonnaise for this recipe, if a non-full fat mayo is used, the results will vary and seasonings may need to be adjusted.
