This amazing garlic parmesan pasta dish is so good and easy to make for a quick dinner!
Ingredients
- • 2 tablespoons olive oil
- • 1 lb chicken breast, cut into bite-sized pieces
- • 2 tablespoons unsalted butter
- • 1 cup purple onion, diced
- • 1 cup chopped tri-colored peppers
- • 2 cloves garlic, minced
- • 2 cups chicken broth
- • 1/2 cup milk
- • 1/2 cup heavy cream
- • 8 oz bow tie pasta
- • salt, to taste
- • pepper, to taste
- • 1/4 -1⁄2 cup parmesan cheese
- • 2 tablespoons fresh parsley, chopped
Instructions
- In a large pan or skillet, heat olive oil and butter over medium heat. Add chicken cook until no longer pink.
- Add in onions and peppers and continue to cook until chicken is fully cooked through and browned.
- Stir in garlic, salt and pepper and cook for an additional minute.
- Add uncooked pasta, milk, cream and chicken broth.
- Stir and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
- Stir in Parmesan.
- If the mixture is too thick, add more milk as needed until desired consistency is reached.
