  • 2 Pie Crusts
  • 5 cups (6 or 7 ripe peaches), peeled and sliced
  • 2 tablespoons lemon juice
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tbsp corn starch
  • Pinch of ground nutmeg


  1. Preheat the oven to 375
  2. Place peaches, cinnamon, brown sugar, granulated sugar, nutmeg and corn starch in a bowl.
  3. Mix together and set aside for 5-7 mins
  4. Prepare pie crust - if using homemade pie crust, blind bake by layering parchment paper and rice or dry beans for weight.
  5. Bake for 10 mins.
  6. Remove from oven, add the filling to the pie crust
  7. If using frozen pie crust, blind bake isn't necessary.
  8. For the top:
  9. Using a pasty roller, make small even strips of dough.
  10. Braid two strips of dough at a time and set aside.
  11. Make 3 braids.
  12. Lay them across the top of the pie as pictured.
  13. Add small strips between them.
  14. Weave in single strips going perpendicular to the strips already down (see photo)
  15. Trim excess
  16. Brush with egg wash and add confectioners sugar to the top
  17. To make the roses, roll strips of dough in a circle.
  18. Cover the edges of the pie with aluminum foil
  19. Bake for 20 mins, remove foil. bake for additional 20 mins.
  20. Let rest 10 mins before serving.
