This buttermilk pie is super easy to make a good for a holiday dessert table!

Ingredients

  • 1 1/4 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 large egg yolk
  • 6 tablespoons unsalted butter, melted
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk, warmed
  • 9-inch pie crust
  • Garnish with fruit of choice

Instructions

  1. Preheat oven to 350 degrees F. 
  2. In a large bowl, whisk sugar, flour, and salt 
  3. Whisk the eggs and egg yolk in a small bowl for about a minute then add to the large bowl
  4. Whisk together, then add the melted butter and whisk.
  5. Add in lemon juice and vanilla and mix.
  6. Place buttermilk in the microwave on HIGH for 25 seconds, then add it to the filling and mix together until incorporated
  7. Pour the filling into the pie pan (there may be a little left over)
  8. Bake for 30 mins then turn it in the oven for an additional 10-15 mins OR until the pie is lightly browned on top.
  9. Cool the pie completely (about 45-60 mins), then chill it for at least 1.5 hours before serving. 
  10. Serve each slice of pie topped fruit or whipped cream

Notes

Do not over whisk the mixture or it will become foamy which will cause the pie to brown unevenly.
