  • Cherry Sauce
  • 1 cup cherries
  • ¼ cup sugar
  • 2 tablespoons cherry liquor
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Brownies
  • 1 ½ sticks unsalted butter, browned
  • 4 ounces semisweet chocolate, chopped
  • ½ cup granulated sugar

Instructions

  1. In a saucepan add the cherries, sugar and cherry liquor, heating on medium heat until they begin to break down. In a separate small bowl add the cornstarch to the water to dissolve. Pour the mixture into the saucepan and continue heating until a thick cherry sauce is created. 
  2. Remove from the heat, set aside a bit for topping the brownies later and let cool completely.
  3. Preheat the oven to 350 degrees fahrenheit. Prepare a 9x9 baking dish with parchment paper.
  4. Brown the butter for the brownie batter in a pot. Stir continuously until the melted butter begins to create brown bits at the bottom of the pot and give off a nutty scent. 
  5. Add the chopped semi sweet chocolate immediately to the hot butter and mix together until completely melted. Remove from the heat.
  6. In a separate bowl, combine the sugar, brown sugar, eggs, vanilla and cherry liquer. Beat until thick and fluffy, use a hand mixer if available, but a whisk can still be used if not. You will notice the mixture has lightened in color as well.
  7. Pour in the brown butter and melted chocolate mixture and mix together on low speed or with a whisk until combined.
  8. Fold in the cocoa powder, flour and espresso powder until combined. Use a rubber spatula at this point to ensure you don’t overmix.
  9. Pour the brownie batter into the pan. Take spoonfuls of the cherry sauce and place throughout the top of the brownie batter. Use a knife or toothpick to swirl into the batter.
  10. Bake for 35-40 minutes or until a toothpick is inserted and comes out clean.
  11. Once out of the oven, let cool completely.
  12. Remove from the dish with parchment paper and cut into squares.
  13. Dollop a nice spoonful of whipped cream on each brownie, followed by a bit of drizzled cherry sauce, set aside earlier and topped with a fresh cherry!
