There are 2 veggies I like with pork, including pork chops. One is bacon braised greens with shallots, garlic, a bit of balsamic vinegar, bacon and chicken stock. I usually use collards, but any greens or a combination would work. The other is fried cabbage and onion with some bacon and balsamic vinegar. I was raised having apples with pork. Often I'll get applesauce, usually unsweetened. A trick I learned from an aunt is to add a bit of vanilla to the applesauce. It really changes it in a good way!
