This Instant Pot Gnocchi Soup is so good and easy to make for a weeknight meal!
Ingredients
- 1lb chicken breast cubed
- 2 cups fresh spinach
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 2 cups chicken broth
- 1 cup matchstick carrots
- 3 cups heavy cream
- 16 oz gnocchi
- 1 Tsp Salt
- 1 Tsp Pepper
- Cooking Spray
Instructions
- Turn the instant pot onto the sauté setting.
- Place the chicken, onion & celery into the instant pot. Lightly spray with cooking spray & sauté until the chicken is browned.
- Pour in the chicken broth & carrots and mix well.
- Place the lid on the instant pot & seal shut.
- Turn the instant pot onto high manual for 5 minutes.
- Quick release.
- Turn the instant pot onto sauté.
- Stir in gnocchi, spinach & heavy cream.
- Boil & stir frequently for about 3-5 minutes or until the gnocchi has fully cooked.
- Serve & enjoy.
