I love making slow cooker soups, you throw everything is and all of the ingredients blend perfectly! We are a big fan of black beans in this house as my Puerto Rican husband was raised on this dish in his puerto rican household.

The slow cooker does all of the work for you, slow cooking the easy soup. The skin of your black beans will separate from the actual bean inside while slow cooking, but both are edible. This slow cooker recipe uses dry beans and awesome seasonings that make for a creamy black bean soup. We love to serve it with a dollop of sour cream.

What ingredients do you need for this awesome slow cooker black bean soup?

2 cloves garlic, minced
1 yellow onion, diced
2 celery ribs, diced
2 carrots, grated
1 lb dry black beans
1 cup salsa – your favorite
1 tablespoon chili powder
½ tablespoon cumin
1 teaspoon oregano
4 cups vegetable broth
2 cup water
Salt & pepper to taste
Blue corn tortilla chips, lime wedges, sour cream or coconut cream for serving

Ingredients
- 2 cloves garlic, minced
- 1 yellow onion, diced
- 2 celery ribs, diced
- 2 carrots, grated
- 1 lb dry black beans
- 1 cup salsa - your favorite
- 1 tablespoon chili powder
- ½ tablespoon cumin
- 1 teaspoon oregano
- 4 cups vegetable broth
- 2 cup water
- Salt & pepper to taste
- Blue corn tortilla chips, lime wedges, sour cream or coconut cream for serving
Instructions
- Rinse beans and place in slow cooker
- Add remaining ingredients except for salt & pepper, chips, lime, and cream
- Stir until well combined
- Cook on low for 6-8 hours, you want the beans to be super soft
- Use an immersion blender to blend, leave some whole beans for texture
- Season with salt & pepper to taste
- Garnish with cream, lime juice, and serve with blue tortilla chips
