1 cup Butter Flavored Crisco or 1/2 butter + 1/2 vegetable shortening

3/4 cup light brown sugar, packed

1/4 cup granulated sugar

2 eggs, large at room temp

1 tablespoon molasses

1 tablespoon vanilla extract

2 cups all-purpose flour, scooped and leveled

1 teaspoon baking soda

½ teaspoon kosher salt

¼ teaspoon cinnamon

1 ½ cup quick oats

For the Filling:

1/2 cup (1 stick) unsalted butter, at room temperature

1/4 cup vegetable shortening

1 teaspoon pure vanilla extract

2 1/2 cups powdered sugar

1 tablespoon milk

Ingredients

  • 1 cup Butter Flavored Crisco or 1/2 butter + 1/2 vegetable shortening
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 eggs, large at room temp
  • 1 tablespoon molasses
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour, scooped and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon cinnamon
  • 1 ½ cup quick cook oats
  • For the Filling:
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/4 cup vegetable shortening
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups powdered sugar
  • 1 tablespoon milk

Instructions

  1. Turn on oven, turn to 350 degrees
  2. In a mixing bowl, beat shortening (or butter and shortening).
  3. Add both sugars and beat until light and fluffy.
  4. Add eggs, molasses and vanilla, mix until incorporated.
  5. Next add in flour, salt, baking soda and cinnamon.
  6. Mix until just incorporated.
  7. Add in the oats and mix well, but dont over mix.
  8. Drop cookies onto parchment lined cookie sheet spaced 1-2 inches apart for room to spread.
  9. Bake for 9-11 mins, just until edges start to turn golden.
  10. The cookies will continue to bake outside the oven on the cookie sheet so dont remove them right away.
  11. While the cookies are cooling make the buttercream.
  12. Add the butter and shortening to a mixing bowl. Beat until smooth.
  13. Add in the powdered sugar, vanilla and milk or cream.
  14. Mix for several min (4-5 min) until fluffy
  15. Enjoy
