Ingredients

  • 1/4 cup powdered sugar
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 2 cups milk chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. In a mixing bowl, combine the sugar, peanut butter, and vanilla until dough forms. Set aside in the refrigerator while you melt the chocolate.
  2. In a microwave-safe container, add the chocolate chips and oil. Microwave for 45 seconds. Remove and mix. If clumpy and not smooth, microwave in 15-second intervals while mixing between melting.  Mix until smooth. 
  3. In silicone muffin liners, add 1 tablespoon of melted chocolate. Tilt liners to coat the sides up the wall of the liner. 
  4. Remove the peanut filling and separate it into 10 balls. Flatten the balls into pucks and place them in the muffin liner on top of the chocolate. Equally, top each cup with melted chocolate and tap smooth. Make sure cups are level and peanut is covered. Set aside to allow the chocolate to harden. Place in the refrigerator to speed the process up. 
  5. Remove cups from the liners and enjoy.
