This delicious Applebees Oriental Chicken Salad Recipe is great for a weeknight meal!
Ingredients
- Ingredients for dressing
- 5 tbsp honey
- 2 tbsp apple cider vinegar
- 1/2 cup dukes Mayonnaise
- 2 tsp Dijon mustard
- 2 small drops sesame oil
- Ingredients for chicken tenders
- 3 cup vegetable oil for frying
- 1 egg, large
- ½ cup milk
- ½ cup all-purpose flour
- ½ cup corn flakes, crushed
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 boneless, skinless chicken breasts
- Ingredients for Salad
- 3 cups romaine lettuce, chopped
- 1 cup napa cabbage, chopped
- 1 cup red cabbage, chopped
- ½ cup carrots, shredded
- 1 green onion, chopped
- 1/3 cup crispy chow mien noodles
- 1-2 tbsp almonds, sliced
Instructions
- Add all of the dressing ingredients into a mason jar (or bowl) and blend with an immersion blender (can also use a regular blender or whisk.) place in the fridge to cool.
- Slice the chicken breast into strips
- Season the strips ½ tsp salt and ½ tsp pepper
- In a bowl add the milk and egg, whisk it together
- In a second medium sized bowl add the flour, crushed corn flakes and remaining salt and pepper. Mix well.
- Heat oil on the stove on a medium high
- Test to see if the oil is ready by placing the handle of a wooden spoon in the center of the frying pan, once the oil bubbles around it, the oil is hot enough.
- Dip the chicken strips in the egg/milk mixture, then into the flour/corn flakes mixture.
- Add to the frying pan, do not over crowd it.
- Cook for 3-4 mins per side until golden brown.
- Remove and let drain on paper towels.
- Add the lettuce, napa and purple cabbage to a large bowl
- Add in the green onion and carrots, toss to mix
- Add chicken and almonds (optional step, toast the almonds in a dry frying pan for 30-60 seconds and add on top)
- Add the dressing.
- Enjoy
Notes
You can use rice wine vinegar in place of the apple cider
vinegar.
Toasted almonds come on the Applebees salad but they can be
omitted.
