Easy Air Fryer Roasted Lamb and Potatoes
This Air Fryer Roasted Lamb and Potatoes recipe is so great for an easy weeknight meal!
Ingredients
- 1.7lbs lamb leg roast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 tablespoon parsley
- 1/2 teaspoon pepper
- 1 teaspoon thyme
- Potatoes or another vegetable for a side
Instructions
- Quarter your side for bite-size pieces.
- Mix the spices.
- Place the lamb roast in the center of the air fryer basket.
- Throw your side vegetables in surrounding the roast.
- Cover the roast and side vegetables with the oil and season generously with the spices both the lamb and side vegetables.
- Cook at 375°f for 15 to 20 minutes or until your desired cook temperature is reached. The meat will continue to cook as it rests so remove it from the heat 5° out from the desired temp.
- Temps are as follows:
- Rare: 110°f
- Medium rare: 120°f
- Medium: 145°f
- Medium well to well: 150°f or higher. USDA recommends not cooking lamb past medium as it becomes dry and tough to eat.
- Remove the lamb to rest and let cool before slicing. Cooling allows the juices to settle. If you cut too soon, you will lose flavor.
- If side vegetables need further cooking, continue to cook while the lamb rests.
- Enjoy with mint jelly or your favorite sauce.
