  • Casserole Ingredients:
  • 6 -7 large bakery croissants (about 10 cups)
  • 2 cups fresh raspberries
  • 2 cups fresh blueberries
  • 12 oz cream cheese (room temp)
  • 1 cup + 2 Tbsp sugar
  • 5 eggs (room temp)
  • 1 ¾ cup heavy cream (room temp)
  • 1 Tbsp vanilla extract
  • 1.5 Tbsp juice from orange
  • 1 tsp orange zest
  • ¼ tsp salt
  • Glaze Ingredients:
  • 2 Tbsp butter
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 2 Tbsp heavy cream

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9in x 13in baking dish and set aside. 
  2. Cut croissants into small bite size pieces and place on a baking sheet. Bake for 9 minutes. Remove from the oven and allow to cool for about 5 minutes.
  3. While croissants are in the oven, make the custard.  Add cream cheese and sugar into a large stand mixing bowl and mix to combine. Add in eggs, heavy cream, juice and zest from the orange, vanilla and salt. Mix to combine. 
  4. To assemble the casserole, place a layer of croissants on the bottom. Add half of the berries and drizzle on half of the custard. Repeat - croissants, berries and remaining custard on top. 
  5. Gently press down on the casserole to make sure as many of the croissant pieces are submerged. 
  6. Let sit for 20 - 30 minutes to allow the croissants to soak up the custard. 
  7. Cover with foil and bake for 45 minutes. After 30 minutes, remove the foil to allow the top to crisp. 
  8. To make the glaze, melt the butter. Combine all of the ingredients into a bowl and mix until the glaze is smooth. 
  9. Drizzle glaze on top of the warm casserole and enjoy!
