  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg, brought to room temperature
  • ½ cup peanut butter, smooth
  • 1 tsp vanilla extract
  • 1 1/3 cup all purpose flour, scooped and leveled
  • 2 tsp cornstarch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

  • 4 tbsp unsalted butter, room temperature 
  • 1/3 cup smooth peanut butter
  • 1 cup powdered sugar
  • 2-3 tsp milk
  • 1 tsp vanilla extract
  • ½ cup seedless raspberry jelly

Ingredients

  • ½ cup unsalted butter, room temp
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg, brought to room temperature
  • ½ cup peanut butter, smooth
  • 1 tsp vanilla extract
  • 1 1/3 cup all purpose flour, scooped and leveled
  • 2 tsp cornstarch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • Peanut butter butter cream
  • 4 tbsp unsalted butter, room temperature
  • 1/3 cup smooth peanut butter
  • 1 cup powdered sugar
  • 2-3 tsp milk
  • 1 tsp vanilla extract
  • ½ cup seedless raspberry jelly

Instructions

  1. Preheat the oven to 350F
  2. Place the egg In a bowl of warm water for 5 mins to bring to room temperature
  3. Line baking sheets with parchment paper and set aside
  4. Cream together butter, brown sugar and granulated sugar until light and fluffy.
  5. Add in the egg, vanilla and peanutbutter and mix until smooth.
  6. Add in the flour, baking soda, baking powder, salt and cornstarch.
  7. Mix until just combined.
  8. Scoop and form, 12 evenly shaped balls of dough 
  9. Press them down to about ½ inch thickness
  10. Bake for 14-15 mins until edges are golden (cookies will crinkle on the top)
  11. Allow to cool on baking sheet for at least ten mins before moving to cooling rack.
  12. Let cookies cool completely-and make buttercream.
  13. For the buttercream
  1. Mix the butter and peanutbutter together until smooth
  2. Add in the powdered sugar, vanilla and 2 tbsp milk
  3. Mix until incorporated.
  4. Only add in the last tbsp of milk if it needs it.
  5. Mix on high for 2-3 mins to make the frosting light and fluffy
  6. Add to a piping bag (if using a tip use tip 14)
  7. Add jelly to a piping bag (if using a tip use tip 14).
  8. Pipe an open swirl of the peanutbutter buttercream.
  9. Filling in the inside swirl with jelly.
  10. Serve and enjoy

Notes

Avoid using a jam or jelly with preserves in it, it will be difficult to pipe within the swirl.

Also use seedless jams or jelly
