Easy Blonde Biscotti Cookies With Almonds

Cook Time: 27 minutes
Total Time: 47 minutes

This yummy biscotti recipe is great for the holidays or anytime!

Ingredients

  • 1 (15oz) white cake mix
  • 2/3 cup all purpose
  • 1 cup almond slivers, toasted and cooled
  • 2 eggs
  • 3 tablespoons unsalted butter, melted
  • 1.5 tsp vanilla extract

Instructions

  1. Preheat the oven to 350
  2. Add 1 cup slivered almonds to a clean pan and lightly toast for about 2 mins (just until fragrant but not browning)
  3. Remove from heat and set aside to cool.
  4. In a large bowl combine cake mix, ap flour, butter, vanilla and eggs
  5. Dough may be slightly crumbly.
  6. Add in almond and knead the dough until it comes together.
  7. Split into two logs
  8. On a parchment lined baking sheet Flatten each half into a 12*24 log.
  9. Leave about 3 inches between each log
  10. Bake for 25 mins or until an inserted toothpick comes out clean.
  11. Cool on cookie sheets for 20 mins.
  12. Remove from parchment and place on cutting board.
  13. Slice diagonally with a sweater knife each piece about 1/2 inch wide.
  14. Flip the slices cut side down.
  15. Place back in oven for 10 mins or until bottoms are golden brown.
  16. Cool on cookie sheet for 2 mins
  17. Transfer to cookie rack and let cool completely.
  18. Dip ends in chocolate or serve as is.
  19. Store in airtight container.
