Balsamic Zucchini With Feta Cheese Easy Side Dish

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

This amazing balsamic zucchini with feta cheese is so great on the side of your favorite protein!


  • 2 large zucchini, sliced
  • ½ cup diced shallot
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons feta crumbles


  1. Preheat oven to 450 degrees and line a baking sheet with parchment paper 
  2. Toss all ingredients except vinegar and feta until well coated 
  3. Roast 10 minutes 
  4. Drizzle with vinegar, toss to coat 
  5. Roast additional 10-15 minutes 
  6. Sprinkle feta over the top 
  7. Serve & enjoy!
