  1. I will definitely be trying this kale salad! I love the name of the salad btw! I usually throw mine in a smoothie. I made kale chips once, and it was pretty good!

    1. My local grocery store doesn’t sell it and its a shame, but I think its worth the extra travel (and money!)

  2. I do like kale although I haven’t bought any recently. It’s good and I’ve used it in salads and smoothies. Haven’t made the chips yet.

  3. Ok, when I was pregnant with my daughter, kale was my worst aversion. I couldn’t even look at it, much less smell it or eat it. I could barely watch the show “LOST” because all of the lush greenery reminded me of kale. I know I sound like a freak. I got over it but didn’t embrace it until I started eating baked kale chips about four months after her birth. And that recipe you posted above? My husband makes it constantly and it’s awesome. We switch different oils and spices in and out based on what we have but the basic idea of an oil and the avocado breaking down the kale to make it edible is brilliant. I guess it retains the vitamins because you don’t have to cook it without being too tough to eat?

    1. You don’t sound like a freak! Now that I think about it, they shouldn’t have called it “lost” they should have called it “kale island”. 🙂 I need to get into a better habit of eating it like you guys! I’ve heard conflicting reports of cooking being better for the kale, as opposed to eating it raw. Who knows. I suppose there are benefits to both ways!

  7. you know when i saw you Instagram this i was hoping you’d blog about it, right?! i’ve been eating kale my whole life. my mama fixed it for me growing up. if i add it to my green smoothies, i have to throw in a little more green apple because it can be a bit spicy. i don’t have coconut oil…EVOO will have to do!

    1. ha 🙂 Yes, one thing I noticed is that it has a bit of a kick. I am seeing coconut oil EVERYWHERE in like a million recipes. I think I just need to take my tail down to Whole Foods and get some.
