The Best Cobb Salad Recipe With Pan Seared Chicken

This amazing cobb salad recipe will be your new favorite! Made with simple fresh ingredients you will make this again and again!

Ingredients

  • 5 large eggs
  • 6-8 strips bacon
  • 1 pound chicken breast tenderloins
  • 1 head romaine lettuce, coarsely chopped
  • 1 head baby bok choy, chopped
  • 8-10 Grape tomatoes, chopped
  • 1 avocado, thinly sliced
  • 4-6 ounces feta cheese, crumbled
  • 2 tsp onion powder
  • 2 tsp black garlic powder
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 tsp paprika
  • Dressing of choice.

Instructions

  1. In a medium pot bring 5 eggs to a boil for 20 mins, remove from heat and immediately place into ice water bath.
  2. Heat a skillet over medium high heat.
  3. Once heated, add strips of bacon, careful not to overcrowd the pan.
  4. Fry bacon for 2-3 min on each side, or to desired thickness
  5. Drain on paper towel.
  6. While the bacon is cooking, season the chicken on both sides.
  7. Once bacon is done cooking, add chicken to the pan and sear in the bacon grease.
  8. Brown on both sides (about 4 mins per side) but can vary based on your skillet/stovetop combination.
  9. Remove and let drain on paper towels.
  10. Add lettuce and bok choy to a large salad bowl.
  11. Peel eggs and slice in half or chop if preferred.
  12. Add tomatoes, avacado, chicken, bacon and feta cheese.
  13. Top with your favorite dressing and enjoy.
