Avocado Kale Salad Recipe – Clean Eating Made Easy

 Avocado Kale Salad Recipe (no dressing needed!)

 

Today we are talking about Kale, Kale Salad in particular. Hanging out in the wellness blogosphere, Kale is ALL THE RAGE. I’m always hearing about new recipes, people throwing it into Green smoothies with no abandon, there is even Kale Chips?!

(I think anything with chips next to it sounds quite yummy actually)

However, I had yet to jump on the kale bandwagon, and I don’t know what the hold up was — apparently its amazing for you jam packed with yummy nutrients and things that superheroes need for daily battle.

My co-worker friend (who is on a mission to eat clean and drop some pounds) told me he was going to make a kale salad and bring me some.

This, ladies and gentlemen, is what you call a breakthrough.

My oh so generous co worker brought me some, as promised, and I surprised myself! I actually liked it. It was good! I can get used to the taste of Kale. I only had a small amount of the salad and I was full (like, didn’t even need to snack before dinner full…who knew?!).

Crazy Sexy Kale Salad Recipe

YIELD: 2 to 4 Servings

PREP TIME: 15 minutes

TOTAL TIME: 15 minutes

Ingredients:

1 bunch kale, any variety, shredded by hand, stems removed
1 cup diced peppers (orange and yellow used)
1 tbsp triple blend Sea Vegetable flakes
2 avocados, pit removed and diced
2 tablespoons coconut oil
1 juiced lemon
1/2 small red onion, diced
Sea salt, to taste
Pinch of cayenne, to taste

Directions:

In a large bowl, combine all ingredients. Massage and mix with your hands to soften the kale and cream the avocado (just a couple minutes), and serve.

I will definitely be trying this kale salad! I love the name of the salad btw! I usually throw mine in a smoothie. I made kale chips once, and it was pretty good!

I saw Kale today in the grocery store in the bag, ready to consume. It was a little pricey but I like Kale.

My local grocery store doesn’t sell it and its a shame, but I think its worth the extra travel (and money!)

I do like kale although I haven’t bought any recently. It’s good and I’ve used it in salads and smoothies. Haven’t made the chips yet.

Ok, when I was pregnant with my daughter, kale was my worst aversion. I couldn’t even look at it, much less smell it or eat it. I could barely watch the show “LOST” because all of the lush greenery reminded me of kale. I know I sound like a freak. I got over it but didn’t embrace it until I started eating baked kale chips about four months after her birth. And that recipe you posted above? My husband makes it constantly and it’s awesome. We switch different oils and spices in and out based on what we have but the basic idea of an oil and the avocado breaking down the kale to make it edible is brilliant. I guess it retains the vitamins because you don’t have to cook it without being too tough to eat?

You don’t sound like a freak! Now that I think about it, they shouldn’t have called it “lost” they should have called it “kale island”. 🙂 I need to get into a better habit of eating it like you guys! I’ve heard conflicting reports of cooking being better for the kale, as opposed to eating it raw. Who knows. I suppose there are benefits to both ways!

I just learned of Kale last summer.  I still haven’t tried it but it’s on my to do list. I mean seriously, I have recipe sitting in the blog box, lol.  I will try this one.  Good to know it meets your approval.

That salad looks delish! I’ve only eaten kale prepared (as a substitute for collard greens). But I’ve been meaning to try it as a salad or at least in a smoothie. The post definitely renewed my interest 😉

you know when i saw you Instagram this i was hoping you’d blog about it, right?! i’ve been eating kale my whole life. my mama fixed it for me growing up. if i add it to my green smoothies, i have to throw in a little more green apple because it can be a bit spicy. i don’t have coconut oil…EVOO will have to do!

ha 🙂 Yes, one thing I noticed is that it has a bit of a kick. I am seeing coconut oil EVERYWHERE in like a million recipes. I think I just need to take my tail down to Whole Foods and get some.

Hi Nellie! I saw this in the ticker tape on your header and just had to chime in! I recently joined the kale bandwagon and LOVE it! Will definitely be trying your recipe. We eat a kale salad every night for dinner or I’ll saute some with a little bit of olive oil and sea salt…delish! I absolutely love the stuff.
