Ingredients
- 6 to 8 red potatoes
- 1 lb ground beef 90/10
- 1 cup water
- 1 package taco seasoning
- 2 roma tomatoes; diced
- 3 cups cheese
- 1 cup sour cream
- 1 red onion; diced
- cilantro for topping
Instructions
- Place water into the instant pot. Add the trivet and place the potatoes on top. Place lid on the instant pot then set the valve to sealed position.
- Press the pressure cook or manual button and set timer to 30 minutes. When the pot stops counting then release the pressure via the valve.
- Potatoes can be remove to a baking dish and kept warm in the oven at the lowest over temperature setting if you only have one instant pot. If you have two instant pots then just keep the potatoes in the pot.
- Place ground beef and half the red onion into the instant pot.
- Set to saute mode and cook until beef is browned. Add in taco seasoning and stir well.
- Top the ground beef on the potatoes and add all your favorite toppings like tomatoes, onions, sour cream, cheese, and cilantro.
