The problem with nachos at a party is that someone always gets the chip with nothing on it, someone else gets the pile that’s all toppings and no chip, and by the time you get to the bottom half the cheese is cold and everything is soggy. You’ve been there.
These nacho bites solve all of that. Every single Tostitos Scoop gets its own layer of refried beans, its own spoonful of seasoned beef, its own cheese — then into the oven for 10 minutes until everything is hot and melty and holding together. Individual portions. No digging. No mess. No chip-to-topping ratio debate.
I’ve made a platter of these for game day and watched them disappear in under 20 minutes. I’ve made them for birthday parties where kids were involved and had zero cleanup drama. They’re one of those appetizers that looks like more effort than it is, and nobody needs to know it’s basically just tacos in a chip.

Spread a small amount of refried beans over the bottom of each chip. Top with a spoonful of ground beef and a small amount of cheese. Place each filled chip on a baking sheet and bake for 10 minutes, until the cheese is melted.

Can You Make These Ahead of Time?
Yes — and honestly this is one of the best reasons to make nacho bites over regular nachos. Here’s how to do it right:
Make the beef mixture up to 2 days ahead and store in the refrigerator. When you’re ready to assemble, warm the beef in a skillet or microwave so it goes into the chips warm, not cold — cold filling means the cheese won’t melt properly in the 10-minute bake time.
Assemble the chips and refrigerate them unfilled until up to 1 hour before your event, then fill and bake right before serving. Don’t assemble and refrigerate the filled chips for more than 30-60 minutes — the beans will start softening the chips and you’ll lose that satisfying crunch.
If you need to bake them ahead, reheat in a 350°F oven for 3-5 minutes rather than the microwave, which turns the chips soft. They won’t be as crispy as fresh-baked but they’ll still be good.
