Vanilla Pudding Pops with Chocolate and Crushed Almonds

One of my favorite parts of summer? The cool and refreshing treats! From ice cream to frozen drinks, cold refreshers are my favorite! Today I’m sharing a super simple Vanilla Pudding Pops recipe that will knock your socks off!

Since we have been largely on lockdown for the past few months, we have had to get real creative in the kitchen AND in the home. We have been trying new summer activities and doing a lot of clean up and re-arranging in the house. 

Honestly it feels like this is a really special opportunity to take care of things that might not get taken care of once life returns to normal (which I think it will, eventually). In addition to that, we have been able to try lots and lots of new recipes!

We are in the thick of a true New York City hot and humid summer so we are keeping a lot of cold treats on hand. With these growing boys, that could mean more than one cold treat per kid per day. 

As a result, we have been stocking up and getting super creative with the cool treats! In addition to these Easy Two Ingredient Fruit Filled Popsicles and these Strawberry Cheesecake Popsicles we tried these fun pudding popsicles!

Vanilla Pudding Pops

I like these a lot because they are a bit more savory than a regular popsicle. You can drizzle chocolate, caramel and use all kinds of toppings. The decoration is way more elaborate and that much more fun of a treat!

This recipe calls for drizzled chocolate and crushed almonds, which is so yummy, but you can get super creative with your choice of toppings.


Refreshing Vanilla Pudding Pops
Yield: 6-9 popsicles

Refreshing Vanilla Pudding Pops

A super easy and refreshing vanilla pudding pops recipe drizzled with chocolate and covered in crushed almonds!


  • 1 bag of vanilla pudding
  • 1.5 cups of milk
  • 4 tablespoons of melted chocolate
  • 2 tablespoons of crushed almonds


  1. Mix pudding and milk
  2. Set aside for 5 minutes
  3. Gently scoop mixture into popsicle molds
  4. Place sticks in a freeze overnight
  5. Run molds under hot water to loosen and place on a plate
  6. Drizzle chocolate over the popsicles and sprinkle with crushed almonds
