These strawberry cupcakes are so good and easy to make! Made with yogurt, egg whites and cake mix, you will love the pink color of the strawberry frosting and delicious taste!
I love strawberry flavored everything. These strawberry cupcakes are so fun because they taste like my childhood favorite strawberry milk. For these cupcakes you won’t need any fresh strawberries or strawberry puree. You already have all the ingredients to make the cupcake batter at home.
Instead of sour cream you will be using greek yogurt. This strawberry cupcake recipe is a bit easier than making it from scratch because you can get the cake mix from the grocery store.
For this recipe you won’t need cake flour or all purpose flour because the strawberry cake mix will cover all of those ingredients. These adorable pink strawberry cupcakes don’t use any lemon zest or strawberry jam.
The pink frosted cupcakes even includes a teaspoon of Himalayan salt! Fancy right? And don’t forget to get the pink cupcake liners for these homemade strawberry cupcakes.

Cupcake Ingredients:
- 1 white cake mix
- 1 cup Greek yogurt
- 1/3 cup vegetable oil
- 4 large egg whites
- 1 ¼ cups water
- 1/3 cup Nestle’ Nesquick Strawberry Powder
- Pink cupcake Paper liners (Get them at Walmart or on Amazon)
Frosting Ingredients
- 1 stick salted butter, softened
- 1 teaspoon vanilla
- 1 teaspoon pink Himalayan salt
- 1-2 teaspoons strawberry extract (depending on how strong of a strawberry flavor you want)
- 4 cups powdered sugar
- 1-2 tablespoons half and half or whole milk
- Pink food coloring
- 1 large piping bag, 1 large round frosting tip
- Wilton Flamingo Royal Icing Decorations, 8-Count (I get mine at Walmart or Amazon, but you can get them at Michael’s Party City and Joann Fabrics as well)
- Pink Sanding Sugar
It’s the perfect treat to serve at a party, especially if your party (baby shower, bridal shower) has a PINK theme! They are the best cupcakes for those who love strawberry milk (like me). 🙂
How do you make the cupcakes?
Preheat oven to 350 degrees. Spray or line a standard muffin tin. Add cake mix to a bowl of an electric mixer. Using a hand or stand mixer, add in wet ingredients, the milk mixture — your oil, egg whites, yogurt and Nestle Nesquick Strawberry Flavored Powder and mix on medium speed until well incorporated.
Use a paddle attachment so you can get everything from the sides of the bowl. Add in your water. Add batter into the prepared cups in the cupcake pans until each is about 2/3 full.
Using a measuring cup is easiest for me. Bake for 16-20 minutes, or until a toothpick comes out clean. Allow to cool completely to room temperature on a wire rack before frosting.

Easy Strawberry Cupcakes with Strawberry Buttercream Frosting

Instructions
Directions for Cupcakes:

- Steps 1-2: Add cake mix to a large mixing bowl. Using a hand or stand mixer, add in your oil, egg whites, yogurt and Nestle Nesquick Strawberry Flavored Powder and mix on medium until well incorporated. Add in your water.
- Step 3: Add batter into the muffin tin until each is about 2/3 full. Bake for 16-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.
Directions for Frosting:
- Steps 4-5: In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy. Mix in the vanilla and strawberry extracts and salt.
- Steps 6-7: Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the half and half or milk in between each cup. Continue to mix for 1 minute or until creamy. Add in your pink food coloring.
- Step 8: Prepare piping bag and fill bag with frosting.
- Step 9: Frost your cupcakes, sprinkle with your pink sanding sugar, and top each cupcake with a Royal Icing Flamingo Decoration. Enjoy!
