Brownies are so simple but so tasty, am I right? I always have a box of brownie mix on-hand just in case someone has a craving or we need a last-minute dessert.

As good as some boxed brownie mixes are, nothing compares to making brownies from scratch. Everything tastes better when the effort is put in! Mini Brownie Bites are no exception.

Mini Brownie Bites are great for a cookie sale, birthday party, or classroom treat since they are more like a muffin or cookie than a traditional brownie and are easier to bag up individually.

Made in a muffin tin, this chocolatey dessert is always a crowd-pleaser.

What Makes These Mini Brownie Bites So Good?

A bonus of using a muffin tin is that you can line it with muffin cups and save some time, energy, and elbow grease with clean up. It is also ok to grease the muffin tin super well and not use liners or you can use silicone cups. 

Not to mention, all the brownies being the same size saves the fight of who gets the biggest portion, since, let’s be honest, it’s nearly impossible to cut straight lines in a pan of warm brownies! 

This Brownie Bites recipe calls for mini semisweet chocolate chips, which I love. The tiny chocolate chips allow for the melty chocolate to be more consistent in each brownie.

Easy Mini Brownie Bites

Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

These mini brownie bites are super easy to make with simple ingredients! Chewy and extra chocolatey you will love these!

Ingredients

  • 1 stick butter, unsalted
  • ½ teaspoon salt
  • 1 cup semi sweet chocolate chips
  • 3 eggs
  • 1 cup white granulated sugar
  • 1 cup flour

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare a mini cupcake pan by spraying with cooking spray.
  3. In a saucepan, melt the butter until browned. Stir every couple minutes and once the butter starts to form brown pieces and the nutty smell arises.
  4. Take off the heat and let cool for 5 minutes. Then add the chocolate chips to the butter and sit for 5 minutes.
  5. While the chocolate chips are melting in the butter, in another bowl add the eggs and sugar to a separate bowl. With a hand mixer beat the eggs and sugar until the mixture lightens a few shades to a pale yellow.
  6. Whisk the butter and chocolate chips together until combined and smooth.
  7. Pour the melted chocolate mixture into the egg mixture and whisk together until combined.
  8. Add in the flour and fold with the wet ingredients just until no more streaks of flour can be seen. Do not overmix.
  9. Use a small spoon or piping bag to fill the mini cupcake pan ¾ way full.
  10. Bake in the oven for 15-20 minutes or until a toothpick inserted into one of the bites comes out clean.
  11. Let the brownie bites cool completely.
  12. Then pop them out of the pan and serve!
