Lately I’ve been obsessed with my Instant Pot. I’ve honestly fallen into the same routine lately of cooking the same meals and having a lack of creativity when it comes to the kitchen.
But honestly, what is better than a good hearty soup? Winter is such a great time for soup, but I’ll keep it real, I can go for a really good bowl of soup YEAR ROUND! No, Really, I eat warm oatmeal for breakfast all year round!
What I like about this Instant Pot Beef Tomato Soup is that it is so flavorful! Plus, it doesn’t take too much thinking (like most Instant Pot Recipes), not to mention you won’t be tied to the stove. The pot just makes everything work so great!
What ingredients are needed for this IP Beef Tomato Soup?
1 white onion; diced
2 lbs beef stew meat
2 – 14.5 oz cans stewed tomatoes
1 bundle italian parsley; chopped
1/2 small bundle (about 10 to 12 leaves) fresh basil; chopped
1 – 32oz box of beef broth
2 cups water (to hit max line in 6qt)
1 teaspoon cracked black pepper
6 oz rotini pasta
grated parmesan for topping
fresh parsley for topping
How do you make this yummy Instant Pot soup? Is it hard?
Nope!
In the instant pot add in onions, beef, and give everything a good stir. Add in stewed tomatoes, parsley, and basil. Fold in the herbs. Pour in beef broth and water. Add in pepper. Stir well.
That’s it! It’s super simple and in no time you will have an awesome soup! Pressure cook this soup for 30 minutes and dinner will be served. You can top with some parmesan cheese and fresh parsley if you like!

Ingredients
- 1 white onion; diced

- 6 oz rotini pasta (we used gluten free)
- grated parmesan for topping

Instructions
- In the instant pot add in onions, beef, and give a good stir. Add in stewed tomatoes, parsley, and basil. Fold in the herbs. Pour in
beef broth and water. Add in pepper. Stir well. No salt is needed as the
tomatoes should add the salt. - Place the lid onto the instant pot. Set the valve to sealed
position. Press pressure cook or manual button and set timer to 30 minutes. - Once the instant pot stops counting and beeps release the pressure.
- Cook the pasta stove top as per directions on box. Drain and
add to the soup. - Serve in a bowl topped with parmesan cheese and fresh
parsley.
