These starbucks copycat birthday cake pops are my favorite sweet treats and my favorite cake pop recipe. This copycat recipe are great for birthday parties and a delectable treat.

These cake balls are made with a cookie scoop and put on lollipop sticks. This copycat starbucks cake pops recipe is an easy recipe with simple ingredients.

The combination of vanilla cake with the candy coating really makes the perfect treat. This homemade cake copycat of starbucks cake pops makes the perfect recipe bite-sized treats.

These starbucks vanilla cake pops are great for a special occasion and one of the best things that came from the Starbucks Bakery.

These easy cake pops can be made into different shapes in a variety of flavors.

Ingredients:

Cake

  • ½ cup butter, unsalted
  • ½ teaspoon salt
  • 1 ¼ cups white granulated sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract
  • 1 ¼ cup all purpose flour
  • 1 ¾ teaspoon baking powder
  • ¾ cup whole milk

Frosting

  • ¼ cup butter, unsalted
  • ¼ teaspoon salt
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 ½ tablespoons milk

Pink Coating

  • 1 ½ cups pink candy melts
  • 1 tablespoon coconut oil

Instructions:

  1. Preheat the oven to 350 degree fahrenheit.
  2. In a large bowl use a hand mixer to blend together the salt and butter.
  3. Then add the sugar and blend everything together again.
  4. Add 2 eggs to the bowl along with the vanilla and almond extract. Mix the rest of the wet ingredients together.
  5. Now pour in the flour and baking powder and blend everything until smooth.
  6. Pour the milk over the batter and use a rubber spatula to slowly mix and fold together until a smooth and thinner batter is created.
  7. Pour the batter into a baking sprayed baking pan and place in the oven for 22 minutes or until a toothpick is stuck in the cake and comes out clean.
  8. While that bakes, take another mixing bowl and add the butter and powdered sugar. Blend together with a hand mixer. It will still look like mostly just crumbled powdered sugar.
  9. Add the milk and vanilla extract to the bowl and blend until a creamy frosting is formed. Set aside
  10. Once the cake it out of the oven let cool for 20 minutes before crumbling into a bowl to make the cake pops.
  11. Once the cake is cool use your hands to break the cake into pieces and create small crumbles.
  12. Add the frosting and blend together with a fork or clean hands until cake pop dough is formed.
  13. Using a 1 inch scoop, take a ball of dough and roll it in your hands to create a cake ball. Place on the parchment paper.
  14. Repeat until you have used up all the dough.
  15. Place the cake balls in the freezer for 15 minutes.
  16. While those are in the freezer, melt the pink melting chips in the microwave at 30 second intervals, mixing in between, until completely smooth.
  17. Remove the cake balls from the freezer and prep an area with the cake pop stand, cake pop sticks, melted chocolate, sprinkles and cake balls.
  18. Dip each cake pop stick ¼ inch into the melted chocolate and place in the center of each cake ball halfway through.
  19. Give the chocolate a minute to harden before picking up each cake pop and dipping in the pink chocolate and coating fully. 
  20. Once removed from the chocolate let the excess drip off by slightly shaking the cake pop side to side.
  21. Place in the cake pop stand and top with white sprinkles. Give them 5 minutes to harden and they are ready to package or enjoy immediately!
